OK let me elaborate, what are the best potatoes to use? should i peel them? what temp in the oven? how much oil? and how long?

I would use baby red potatoes or any kind of baby waxy potato. Wash any dirt and dust off, cut them into quarters or whatever small shapes you would like. Place them on a baking sheet and drizzle with oil and sprinkle with salt and whatever seasonings you would like, I recommend Fresh Rosemary.

Place the pan in a 400 degree oven for about 1 hour or until the potatoes are crispy, turning them halfway through the cooking process.

Hi

I wouldn't peel them, I would wash them, put them in a slow cooker with lots of my favorite spices, like Cavender all purpose greek seasoning and parsley. Start the slow cooker about to be about 4 hours before you start other items.

The peel has the vitamins and it also keeps the potato from drying out too much.

You can add in other things like garlic, onion or carrots after the potato gets going.

baby yukon gold. i wouldn't peel them, just cut them. put in a couple of tablespoons of olive oil, mince some rosemary, a half a cup of parmesas and mix it all together. roast at 400 for 50 minutes, flip the potatoes half way through.

Any potatoes can be used. You can peal them or not (it's up to you).Cut them into chunks-the smaller you cut them the quicker they will cook-put them in a bowl and toss oil-just enough to coat them. Then add some spices and stir again.Put in a pan or o na cookie sheet(in a single layer) and bake at 400 stirring occationally. until brown all around and soft in the middle.--
If you cut them small they should be done in about 20 min.
