You can use both. Some recipes call only for the white part, but don't throw it out! I use the whole thing in my potato salad and with bread crumbs and butter to stuff fish and mushrooms. The green part is not chives, but they are related and can be a stand in for chives.

I have to sort of agree and disagree with 'wifey'. You can use the entire green onion and some do and some don't. However the stem is not what is called 'chives'. Chives are a totally different plant and you will not see the root end of them in stores. Only the tops are harvested. The tops of chives are a flat leaf rather than a hollow tube like green onion tops. Also chives have a much stronger taste than green onions. Chives are used a great deal in stir fry and in Gyoza. For oriental soups the stem of the green onion is usually choped and sprinkled over the top after the soup is finished cooking.

Oh those little stringy like onions? You can use all of it. The green part is a good soup topper, can be used in cooking, salads, soups, etc pretty much anything. They have a great flavor fresh from the garden

Use all the onion, just cut it very fine and all is edible.You can use the green tops for salads and the whole thing in cooking, just like regular onions.They are delicious....

I would say all of it BUT if you are making a white cream sauce and want it to stay white, then do not use the green part if you are cooking it as it will give a green tinge to your sauce, if you want to use them in it then wait until your sauce is done and sprinkle the finely chopped green parts over the sauce, errr yeah..don't use the dangly roots

The stalk. Cut it all the way down to where it turns white and use the green part.

Why everything but the root end. Use all white and green. Just chop off litlle hairs at end.Enjoy

I use pretty much all of it except the 2" of green at the top. They get wilty. So I use the whites and most of the greens.

use the whole thing, most of the flavor will be the white end but the whole onion is edible
