Well coriander can add a nice kick to all kinds of dishes...here is a great carrot side dish that uses it.
2 lbs thickish carrots
2 tablespoons coriander seeds (heaped tablespoons)
1 teaspoon black peppercorns (heaped teaspoon)
4-5 tablespoons olive oil
4 garlic cloves
salt
4-5 tablespoons chopped fresh parsley
Peel the carrots and cut them into 4-5cm / 1.5-2 inches pieces. Put the pieces into a bowl.
Roast coriander seeds and black pepper in a skillet WITHOUT using any oil or butter. Coarsly ground the roasted spices and sprinkle over carrots. Salt the carrots and mix well.
Pour olive oil into a small container. Peel and mince the garlic and mix it with the olive oil. Mix oil-garlic mixture with the carrots and pour the carrots into an ovenproof dish.
Cook in the middle of a preheated oven (220°C/430F) for ca 40 minutes or until soft and brown around the edges.
Mix in the chopped parsley and serve.
I love rosemary as well and use it to season many dishes...One of my favorites is roasted rosemany potatoes-
2 lbs red potatoes, left whole if small, halved or quartered if large
8 cloves garlic, peeled
2 tablespoons extra-virgin olive oil
1 tablespoon dried rosemary
salt, preferably the coarse variety
fresh ground pepper
Place the potatoes and garlic in a shallow baking dish large enough to hold them in a single layer.
Drizzle with the oil and toss well to evenly coat.
Sprinkle with the rosemary, salt and freshly ground pepper.
Toss again.
Roast, uncovered, for 40-50 minutes, depending on size, turning halfway through cooking time, or until the potatoes are nicely browned and tender through the center.
Serve hot.
Serves 6.
If you like caraway then you will like this simple noodle dish that uses it as the main ingredient...its easy and tastes great-
1 lb egg noodles, 1/2-inch wide
2 tablespoons butter
1 tablespoon caraway seeds
2 tablespoons parsley, chopped
Cook noodles in large pot of boiling salted water until just tender but still firm to bite. Drain well.
Melt butter in same large pot. Add noodles and caraway seeds and toss to coat. Season with salt and pepper. Transfer to plates. Sprinkle with parsley.

rosemary is great on chicken, salmon, and lamb, I use it alot! Celery salt is great in soups and goulash, caraway seed is good in breads, and sauerkraut. Nothing pops in my mind for the rest of the spices.
