Well, I would certainly ask them how they got to where they are in life right now, they don't have to go into their childhood, just what lead them into the direction that they have taken in life. Also why not ask them questions that you can easily answer yourself. My main rule is to ask questions that if they asked you the same, you wouldn't struggle to answer. Also as you are on your date, notice things about them, like their style of dress, mention an article of clothing that you like and ask them what made them choose the outfit for tonight. You'd be surprised about what people come up with. Also, never forget to be yourself, once you hit a subject that get's the conversation flowing, don't get self conscious and nervous about keeping it going. Just have fun. That's what dating is all about.

Let them know of some activities you like to do! Such as go for a hike in nature, a swim in the ocean or lake, or skating, etc.
When they say oh, I like that too. Then set up a time to take part in that activity. Once you are there together, all the words will flow naturally. Remember even the times you are silent you are still communicating. Energy is exchanged in subtle ways as well.

Good luck!

Just calm down first and relax. No need to be nervous here or worry too much. Don't try to impress him too much either. Just be yourself. Ask any questions you like but keep them in good taste if you get my drift. I'll have to agree with some of the answers you've already got for this.

go some where, where there arent distractions and just sit there and talk...ask them the things they like , the different things they've done???...just sit there and let things come out that usually works for me...just dont freak them out and start talking about the future and kids and stuff that always gets them..or if that doesnt work plan something with a group of friends from both sides and that way it wont be that uncomfortable..
