i am trying to avoid eggs on the whole...

2 tbsp corn starch = 1 egg
2 tbsp arrowroot flour = 1 egg
2 tbsp potato starch = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
1 banana = 1 egg in cakes.

great idea avoiding the eggs if at all possible -- (has 72% of your daily needed cholesterol per egg!!!) i recommend using a product called eggbeaters use a 1/4 cup of that and it is the same as a real egg this has almost no cholesterol and is a lot better for you - it is still made from 99% real egg -- looks like they just removed the bad stuff out of it Try It and ENJOY!!

There's a product called Ener-G Egg replacer that I use in baked goods.

Otherwise you can often substitute:
applesauce
a banana

You can also use self-rising flour (which is just flour with baking powder and a little salt.)

at your grocery store in the refrigerated section -they have actual egg substitute.
