Does anyone have a recipe for chicken fajitas that is marinated in lager or tequila? Or any good chicken fajita recipe that they use themselves.

Chicken Fajita

Ingredients:
2 boneless, skinless chicken breasts
1 1/2 teaspoon cumin
2 cloves garlic, minced
1 1/2 teaspoon paprika
1 1/2 teaspoon onion powder
1 1/2 teaspoon chili powder
1 small green bell pepper cut into strips
1 small red onion, quartered and separated
1 small zucchini, chopped
8 fat-free flour tortillas
8 ounces shredded lowfat cheddar cheese

Spray a large nonstick skillet with cooking spray and heat over high heat. Slice each chicken breast into bite-sized pieces. Add chicken and seasoning ingredients to skillet and cook for 6-8 minutes, turning occasionally.

Add vegetables and continue cooking until vegetables are crisp-tender and chicken is no longer pink in the center. Serve fajitas on heated tortillas topped with shredded cheese.

Tex-Mex Chicken Fajitas:

1½ hours 1¼ hours prep
6-8 servings

1 cup beer
1/2 cup soy sauce
1/4 cup Worcestershire sauce
1/4 cup lemon juice
2 tablespoons olive oil
1 teaspoon hot sauce
3 cloves garlic, minced
1 sweet onion, cut into 1/2 inch-thick slices
1 green bell pepper, halved
6 skinless boneless chicken breast halves
flour tortillas
Toppings
salsa
sour cream
shredded cheese
chopped avocados

1. Whisk together first 7 ingredients until well blended.
2. Place onion and bell pepper in 1 zip-top bag; add 1/2 cup beer mixture.
3. Seal, turning to coat.
4. Chill 1 hour.
5. Place chicken in remaining zip-top bag; add remaining beer mixture.
6. Seal, turning to coat.
7. Chill 1 hour, turning once.
8. Drain chicken, discarding marinade.
9. Grill chicken and onion, covered with grill lid, over high heat (400° to 500°) 5 to 6 minutes on each side.
10. Grill bell pepper 5 minutes.
11. Cut chicken into thin slices, and cut bell pepper into thin strips.
12. Serve chicken, onion, and bell pepper with flour tortillas.
13. Serve with desired toppings.
14. *1(1 1/2-pound) package flank steak may be substituted for chicken.
15. Marinate 4 hours.
16. Grill flank steak 10 minutes on each side.

Put the chicken in a bag. Throw in some chopped cilantro, crushed fresh garlic, the juice from a lime, and some finely chopped fresh chili pepper (such as jalepeno) a little salt and pepper. Cover it with tequila and shake to mix everything up. Let it sit overnight.

You can easily use chicken instead of the steak!


Skirt Steak Fajitas

Serves: 8 -10

I N G R E D I E N T S
3 pounds skirt steak, trimmed of fat
1/2 cup lime juice
1/3 cup salad oil (or olive oil)
1/3 cup tequila or lime juice
4 cloves garlic, minced or pressed
1 1/2 teaspoons ground cumin
1 teaspoon dry oregano leaves
1/2 teaspoon black pepper
4 or 5 small yellow onions (unpeeled), cut in half, lengthwise
8 to 10 green onions with tops, rinsed well and drained


I N S T R U C T I O N S
Cut the steak crosswise into 12-inch lengths, then place in a 9 X 13 inch dish. In a small bowl, stir together the lime juice, oil, tequila, garlic cumin, oregano, and pepper. Pour over the meat, turn meat to coat. Place the onion halves, cut side down, in marinade alongside the meat. Cover and refrigerate for at least 4 hours or until the next day, turning the meat occasionally.

Tie the green onions together with a string about 3 inches from the roots to form a brush.

Place the onion halves on a grill 4 to 6 inches above a solid bed of hot coals (you should be able to hold your hand at grill level for no more than 2 to 3 seconds.). Cook for about 7 minutes; turn over. Lift meat from the marinade and drain briefly (reserve marinade). Place on grill. Baste meat and onion halves with marinade using green onion roots as a brush. Continue to cook onion halves until browned and slightly soft when pressed, 5 to 9 more minutes. Cook meat, turning once, until browned and done to your liking (cut to test), about 6 minutes for rare. Place meat and onion halves on a carving board as cooked; cover loosely to keep warm.

As the meat cooks, place Frijoles on the grill away from the main heat; stir often until hot. Roll onion brush in the marinade and lay on the grill. Turn the brush often until tops are wilted, about 3 to 5 minutes. Place brush on the board; remove string. Thinly slice the meat across the grain.

Let each person heat their own tortillas on the grill turning often with tongs until soft, 15 to 30 seconds. (Use caution as they will burn easily). Place a few meat slices down center of each tortilla; top with some Frijoles, a few pieces from the onion halves, salsa, guacamole, then sour cream and cilantro. Fold up the bottom, then fold in sides to enclose. Eat green onions alongside.

Serve with freshly made frijoles, salsa fresca, guacamole, sour cream, and fresh cilantro.

There is a thing called "Liquid Smoke" that you mix with water and it marinades the chicken/steak to taste like mesquite!

You MUST make homemade guacamole and I have the best recipe for salsa

i marinate them in orange juice, chicken seasoner, bell pepper, onion and tomato a little salt and they are good in fact I did my shrimp like that yesterday and it was really good easy and fast.
