Easter is on April 8 this year.
As far as more families traveling this time, it depends when you are comparing it to. The summer is usually the busiest time for families to cruise, also around Christmas and New Years is pretty popular as well. Not everyone is off for Easter, so they may not be able to go. Since it does fall during the spring break season, it can be a little more crowded.
The time around Easter is one of the more popular times for families, but I would say it is far from the most popular time for families.

Good Friday is on 04/06/07 and Easter Sunday is on 04/08/07.
There will likely be less families with school aged children cruising this week as most Spring Breaks are in March.
There are some good deals for departures during Easter Weekend.

I would think Spring Break would be busier then Easter Vacation but don't be surprised if it turns out there are alot of kids during this time. The higher the quality of the ship probably less likely to have as many kids.

When I worked at Disney World they always said that Easter week was the 2nd busiest week of the year for them (New years being the first). So maybe everyone stays on land? Go ahead and cruise! :)

If school is out, familes travel. School breaks always generate a "peak season" when prices are higher and occupancy is filled. It is always best to book early for the lowest prices and the best deals.

It you want a quiet cruise be sure to rethink a cruise on spring break. We date that one year and it was horrible, the parents just let their kids run wild.
