My Favorite thing to make in the crock pot is my Spagetti sauce or as some of us Italians call it "Gravy".. I first brown meat( pork, beef and sausage) on the stove. then but it in the crock pot with my canned tomatoes and let it cook most of the day. Its so good that the pork is falling off the bone!!
I have also made Chili in the crock pot with just as good results!

My fave is Garlic Smashed Potatoes-
3 lbs. small red potatoes
4 cloves garlic, minced
1 teaspoon salt
1/2 cup water
2 tablespoons olive oil
1/2 cup chive and onion cream cheese spread
1/2 - 3/4 cup milk
Cut potatoes into halves or quarters-just make them all similar size pieces! Place in crock-pot. Add garlic, salt, water and oil and make sure potatoes are coated.
Cover and cook on high 3 1/2 - 4 1/2 hours, until potatoes are tender.
Use a fork or potato masher to mash potatoes and add garlic. Stir in the cream cheese spread and blend well. Stir in enough milk for soft serving consistency and either serve immediately, or cover and hold in the crock-pot on low for up to 2 hours and enjoy!

Easy ribs- Broil country style ribs to brown. Cut into serving size pieces. Place in crockpot with a bottle of bbq sauce and a cut up union. Awesome.
Cut up a kielbasa or two into serving size pieces. Add ketchup, mustard brown sugar and a little worcestershire sauce.
Both recipes- 4hrs high or 8hrs low

I like making what I call "Refridgerator Soup". I take all the left over chicken from my roast, all the veggies that have collected in my veggie bin, any cartons of stock that I havent finished, that half can of tomato paste from the pasta I made. Left over noodles from the same pasta. And I stick it all in and leave it. Comes out pretty good!
