That's easy. For most of us mothers, we tend to believe that, as long as our children are eating then they're ok. That's always been a tip-off for me, when one of my daughters was not eating or picking at her food. That was always a signal to speed up supper, leave the dishes and concentrate on what was bothering her.
For you, it might be as simple as sitting down and talking to your mom about your life plan and your desire to put healthy foods in your body. Don't judge her and don't criticize the food that she's been putting in front of you. Chances are, she learned her meal planning from her own mother.
Ask her to, perhaps, allow you to prepare a large healthy salad to accompany the dinner that she's preparing for you and the rest of the family. It's very likely that she won't oppose what you're eating, as long as you appear to be eating lots of it (again, a few generations ago, parents were downright proud that their children were "big eaters" and would often be heard bragging about such things).
Sit down with your family, eat your healthy dish and interact with them the way that the family dinner table was meant to be. Who knows? Maybe your mom will enjoy the salad, too. :-)

Because she might not be that educated about a good diet, was she brought up on a bad diet? and thinks that her little boy is slipping away from her by not wanting her cooking.
Suggest that the two of you make a healthy meal and maybe do some exercise together (such as going out for a walk) and this might spur her into action about her own weight and it could be something for her to do with you.
Its all about her little boy growing up and she doesnt want you to slip away from her!! She obviously loves you very much!

Define "bad food"....perhaps your mum is just trying to get some variety in your diet.
Why don't you offer to cook at home one or two nights a week, then you can show your mum the type of foods you like to eat without causing any friction...she might even like it!

Maybe because she still got the mentality of fat means healthy? Explain to her that you rather eat healthy foods and it would be nice if she joined you? Many parents need to be educated about foods but in a way that doesn't makes them feel bad about their parenting or culinary skills (like Jamie Oliver did to many of us!!!)

I know I know what you mean. My mom also never tries to eat healthy and she doesn't really care what we eat and if we will get overweight.She loves junk food and take aways and when she cooks she uses too much fat.I don't think she wants me to become like her but she doesn't really know how to care about healthy diet.

It sounds to me that your mom is jealous of you because you are fit and she is overweight. She is trying to make herself feel better by trying to make you gain weight. She may feel really insecure about her weight and this is mostlikely why she's being the way she is. It's not right for her to be doing this to you. Id advise your mom to start a diet and exersise and she too could feel great and start to look great too.

Prehaps she has a self esteem problem and want you to be like her and maybe she feels ashamed of herself. Try to expalin to her that you think she should eat healthier like you and that you love her for being herserlf but you want to stay fit and heathy. Thats my best advice xx

Mothers generally love their children no matter what age, and they show their love in different ways, with your mum she is showing her love for you through food, others may buy their children whatever the child wants - guilty as charged.

That is interesting. Probably, she feels you are too thin.
Do explain it to her. Show her websites that show what healthy food is all about.
Also try make her eat heat healthy too.
