Im at home today and getting very hungry for lunch, i know you all dont know what kind of food i have stocked up here but does anyone have any real yummy lunch ideas for me, something i can make thats really good, im in the mood for something good but easy as i have a 1 year old here with me. Thanks!

You say you are with a 1 year old, how about my favorite Peanut Butter and Jelly sandwich's, and a glass of milk. I feel hungry now too.

Mixed Fruit and Spring Greens with White Chocolate-Orange


Salad:
1 (15-ounce) can Mandarin oranges
5 ounces pre-washed spring greens
2 cups fresh strawberries, quartered
1/2 pint blueberries
Dressing:
1/4 cup Champagne wine vinegar
1/3 cup reserved Mandarin orange juice
1/4 teaspoon salt
2 tablespoons sugar
1/4 cup white chocolate chips
3 tablespoons olive oil


Drain Mandarin oranges and reserve juice. In a large bowl, combine salad greens and fruit. Set aside.
To make the dressing, in a small saucepan over medium-low heat, combine vinegar, 1/3 cup reserved Mandarin juice, salt, and sugar. Gently heat until sugar is dissolved. Remove from heat. Stir in white chocolate until melted. Set aside to cool. Do not refrigerate, as white chocolate will set.
Before serving, slowly whisk in olive oil. Spoon desired amount over salad and toss. Serve remaining dressing on side.

A wrap sounds yummy
Here is a recipe
2 leaves romaine lettuce
1 cup chopped cooked turkey
1 cup shredded Gouda cheese
1/2 cup chopped tomato
2 Tbsp. chopped green onion
1/4 cup Caesar salad dressing
PREPARATION:
Combine all ingredients except lettuce in medium bowl and mix well. Place mixture on lettuce leaves and roll up; serve immediately or wrap in foil and refrigerate up to 4 hours.

Boneless skinless chicken breast, diced and sauteed in a fry pan
with a lil olive oil

bag or fresh salad fixins, top salad with chicken, lightly sprinkle your favorite dressing,

The chicken can be substitute with can of drained tuna too.

You could make a Banquet Pot Pie they are really good and they prepare in like 3:30 in the Microwave.

Grilled sandwiches with whatever's in the fridge. Mayo, mustard, pesto, leftover salad greens, any cheese, just clear out those shelves and drawers! :)

My favorite quick lunch is

Tortillas
Avacados
Bacon (I use soy bacon but most people don't like it)

Just put it in the torilla and YUMM!!

some of those frozen breaded-chickens that you buy in the frozen foods section pop 'em in the oven and make a sandwich (cut them up for the little one)........or mac and cheese with chicken cutlets..............tuna with bacon slices on toast is a good one................lentil soup.......tomato soup with cheddar........roast beef sandwich......i don't know im all out

i just ate cheese casadias. YOU make them with flour tortias and salsa. YOU make them like cheese sandwiches. OR you can do the same with BREAD. MY favorite is fried egg sandwich with cheese. its quick and it taste good.
