Strawnana Bread

"Quick and easy to make, oh so fruity, and very yummy!!"


2 - 9 x 5 inch loaves

INGREDIENTS
4 eggs, lightly beaten
2 cups white sugar
1 1/2 cups strawberries, mashed
1 cup mashed bananas
1 tablespoon orange zest
1 cup vegetable oil
3 cups all-purpose flour
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup chopped walnuts
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5 inch pans.
In a medium bowl, mix together flour, baking soda, cinnamon, salt, and nutmeg.
In a large bowl, combine eggs, sugar, strawberries, bananas, orange peel, and oil. Beat with an electric mixer at medium speed for 2 minutes. Add flour mixture, and stir just until moistened. Stir in walnuts.
Bake for 1 hour, or until loaves test done. Remove to wire rack to cool.

Any starchy fruit or veggie will do. Potatoes (sweet and white are great) and winter squash of every variety. Also consider just adding different dried fruit and nut combos to your current banana bread recipe. Some of my favs are:
cranberries and walnuts, blueberries and pecans, pineapple and macadamia nuts.

An even healthier way to make banana bread is to leave out the sugar and add two TBS. ground flax seed. (adjust for your recipe) Without the sugar it tastes less banana-y

I usued to make banana bread all the time until a found a recipe for moist apple cake. It's really good. I don't have the recipe with me but I am sure you could find one on the internet. I like to add different ingredients to the basic recipe. I usually add carrots, walnuts and raisins. My family raves about it.

Its not a fruit but you can use zuccini it has a great consistency and it is way good to eat. We make chocolate zuccini cakes all the time and then we put this great thing on top. Sorry it isn't a fruit. Or you could make applesauce bread its not that great but it makes good french toast.

I use my same recipe as for my banana bread but use frozen blueberries. I have tried fresh berries but no matter how gently I mixed them it still turned the batter blue. The frozen ones mixed very gently didn't and the bread has become one of our favourites. Hope you like.

It's not a fruit, but using zucchini and chocolate chips actually makes a pretty sweet bread. I loved it as a child.

I don't know about fruit, but some excellent vegetable breads are zucchini, pumpkin and (my favorite!) carrot. They're all sweet breads--you really can't tell there are any veggies in them. :)

applesauce, or apple cubes, etc would be similar.

other great quick breads with a similar taste: pumpkin, zucchini.

You can also switch up the nuts used, if any...and use different spreads. Jellies, jams, I love these with cream cheese.

I love corn bread (corn is actually a vegetable and not a fruit).
