Anyone know the difference between these two please. I am making a stew and obviously would use stewing steak but none at store. Is braising steak the same thing really?
Thanks

Stew meat has more connective tissues and take longer in moist heat to cook, Braising you normally seer the steak and then cook it in the same fashion but not as long

I assume you're talking about beef. There's not a great deal of difference (by definition) between stewing and braising; although I think "stewing" implies a longer cooking time.

The reason they refer to the beef as "stewing" or "braising" meat is because it comes from a tougher cut, such as the shoulder. If you simply grilled meat such as this, it would taste just fine, but it would be very hard to chew. There's also more connective tissue and sinew.

When you braise (or stew), you're cooking the meat in some liquid, for a rather long period of time (ideally, the liquid shouldn't be rapidly boiling during the cooking; it should be just barely simmering).

So, whichever kind of meat is available, it'll work just fine.

What Is Braising Steak

There is no real difference.

They are both very tough, inexpensive cuts of steak which become tender with a long cooking process (such as making beef stew).

Did you look for "Stew beef?" That is the same.

Buy a sirloin roast and cut it up in squares......To a pot add enough water to cover the meat....salt pepper and what ever you like...cook the meat very slow...watch your water once the meat is fork tender, add all the other ingredients you prefer..The water you have used in the meat is now a wonderful base and very tasty.
Good luck
