Do you think I could substitute chicken or beef for the pork? Also, could I used ground meat?

That's the beauty of a burrito. A sandwich in a tortilla really. It's convenient, not messy and compact. You put anything you want. we make them all the time at our house, for dinner and evern sometimes for breakfast.

whip up some scrambled eggs
hash browns
cheese
sausage, or ham or bacon
salsa (I prefer new mexico red chile)

voila. burritos. You can be as creative as you want.

It's a matter of taste, look at the combination of ingredients and decide if they go with the protein product you'd like to use

It depends if you want a real burrito or a "wrap".All are Ok just not very authentic.
