I wouldn't say this is my signature dish, but I do like to make it and it is really yummy. I just posted it on the kraft foods web site.
Ingredients:
1-1 1/2 lbs ground beef
1 large onion chopped
2-3 celery stalks chopped
1 lb carrots chooped
1 can of corn
1 can zucchini in tomato sauce (optional)
1 (8oz) can tomato sauce (preferably roasted garlic)
2 (14.5 oz) cans stewed tomatoes
1/2 head of cabbage (optional)
8 cups water
1 tbs. chicken bouillion
1 tsp. basil
1 tsp oregano
1 tbsp. minced garlic
2 bay leaves
1 tbsp. salt
1 tbsp. pepper
Preparation:
Brown ground beef and onion and then drain. Add tomato sauce, stewed tomatoes, water, corn, bouillon and spices except for salt and pepper. Bring to a simmer add carrots and celery simmer for 25 minutes, add cabbage simmer 5 minutes add potatoes simmer for 15 minutes add zucchini and simmer yntil vegetables are tender. Salt and pepper to taste.
Notes:
You can use all fresh all canned or a combination of both for the vegetables. The serving size and cook times vary.

There is this chicken pie that I love.....
Chicken (2 breasts)- cooked
1 can cream of chicken soup
1 can cream of mushroom soup
1 16 oz container of sour cream
1 large can of veg all
1 sleeve ritz crackers
1/2 cup butter/margarine
pepper and salt
Mix the 2 cans of soup and the sour cream together well. Add the cook chicken and the vegetables to the mix. Put it in a baking dish. Crumble the ritz crackers and put them on top. Drizzle melted butter over it, and ad pepper and salt to taste. Bake for 35 minutes. Let cool and eat!!

RITZ CHICKEN CASSEROLE
6 chicken breasts
2 cans cream of chicken soup
1 tube Ritz crackers
8 oz. sour cream with onion
1 tsp. celery seed
1 1/2 stick butter
Boil breast until tender; remove skin and bones and cut into small pieces. Spread in buttered casserole. Crush crackers and add celery seed. Spread over soup. Melt butter and pour over all evenly. Bake 20 to 30 minutes at 350 degrees until hot and bubbly. Hint: This is a very rich dish - lower calorie butter or imitation sour cream may be substituted without altering flavor.

Whiskey Smoked Shrimp laden over a tri level of tomato, cilantro and plain tortilla disc with a black bean and corn relish between, topped off with an Avocado Crema and drizzled with a cilantro and lime oil.
Delicious, won me 500 dollars that recipe did. Southwestern Cuisine rocks!

A crab bisque/chowder thing. You have to save all the shells from eating crab legs the night before and make it into an all day stock. Then sauteeing onions, celery, red bell pepper, garlic in a lot of butter, adding stock and a diced up potato or two, and near the end, a pint of cream and whatever leftover crab meat or other seafood I have. some salt and pepper and I'm done!

Jalapeno stuffed shrimp and char grilled oysters:
Jalapeno stuffed shrimp:
Head and devein shrimp
Clean jalapenos, I use surgical gloves, so as not burn the skin under my nails
Cut Jalapenos into small strips
Place strips of jalapenos into shrimp
Cook bacon until almost done but still loose enough to wrap around shrimp and jalapeno, secure with tooth pick
Make your baste, 3/4 cup pure cans syrup, 1/2 to 3/4 bottle either soy sauce or terriyali sauce, I love the terriyaki sauce
Place shrimp on grill and baste
Cook until bacon is crisp, baste again and remove
Enjoy!!!!

Gouchos!
Prepare hamburger meat with taco packet of seasoning as if you were making tacos.
open a can of cresent rolls and use the individual squares, not the triangles hint: two triangles = a square
make a pocket with the meat and bake as directed.
Top with green onion, sherdded cheese, and sour cream...

TRIPLE CHOCOLATE FUDGE CARAMEL NUT TORTE
1 package brownie mix (made as to box instructs)
1/2 cup semi-Sweet choc. chips
1/2 cup white choc. chips
1 /2 cup chopped walnuts
2-4 tablespoon cooking oil.
1 jar caramel ice cream topping***
make brownie in tart pan, cook until brownie is done, slightly less then instructions on box. let cool. remove from tart pan onto a round platter. pour 1/2 jar of the caramel topping onto brownie. in ceramic/glass dish place dark choc. chip and 1-2 tbsp of oil. microwave for 30 sec. stir and microwave for 15 sec increments until chocolate is melted completely. drizzle choc onto tart. do the same with the white choc. chips. after all choc. is melted and drizzled onto tart, sprinkle walnuts on top of tart. 4let sit for choc. to set a bit, approx. 1 hour. serve in small pieces because this is very rich.
*** you can make your own caramel sauce using aprox 15-17 caramel candies and 2-4 tablespoons of milk microwave in 15-30 sec increments till smooth.-homemade caramel sauce.

Probably chicken parm--my secret is don't put the cheese or sauce on it till the very end, so the chicken is still crispy.
