The 3rd Crusade was from 1187 to 1192 and it ended with a peace treaty giving Christians access to Jerusalem and the holy sights.
In the initial phases of that conflict Saladin was successful until the arrival of Richard who re-took Acre. Then at the Battle of Arsuf Saladin ambushed Richard, but was driven back. Richard also managed to capture the cities of Daron, Jaffa, and Ascalon before the Treaty of Jaffa put an end to the hostilities of the 3rd Crusade. The results were that Christians were not to be harrassed while traveling in Palestine and Jerusalem. They were basically given free reign to go wherever they liked in the holy land.
Thus there was no clear victor, but in terms of military victories against one another Richard was clearly the winner. Saladin died the following year and his kingdom fell into ruin as his sons fought over controll. Meanwhile Richard attempted to return to England but was captured by Leopold of Austria and he would not set foot in his home land until 1194.

They defeated the Muslims near Arsuf and were in sight of Jerusalem. However, the inability of the crusaders to thrive in the locale because of inadequate food and water resulted in an empty victory. Richard left the following year after establishing a truce with Saladin.

Saladin won. The only Crusade that the Europeans won was the first one. By the time Richard arrived, the situation was already going downhill for the so-called Christians of Europe. Previously, the Jews and Muslims had lived, peacefully, in Jerusalem for many years. The Europeans killed Jews and burned their synagogues in Europe, on their way to Jerusalem. By the time they got to Jerusalem, they had created a blood bath. The Europeans were the aggressors and slaughtered Jews and Muslims alike. Many atrocities were committed in the name of Christianity. Even pregnant women were impaled with spears onto the walls.
Europe was in desperate straits regarding lack of jobs and food. Third sons went to land grab. They even took property and churches away from Eastern Orthodox Christians. There was nothing about the Crusades that was glorious or sentimental. The English wrote fascinating novels about this period that were little more than pure fiction.

History will read that George W. Bush conquered Bagdad too, but did he really win? Nobody wins wars, either you survive or you don't. They are like storms in that respect.
