HOMEMADE BISCUIT MIX

Basic Mix:

4 cups all-purpose flour
2 cups cake flour
1/4 cup baking powder
1 1/2 teaspoons salt
1/2 lb. Crisco

Sift together flours, baking powder and salt. 1 well combined, cut in Crisco using paddle attachment of mixer.
Store in refrigerator for up to one month. Can be used as a substitute whenever biscuit mix is called for in a recipe.


Biscuits:

2 cups basic mix
7/8 cup milk or half and half


Measure 2 cups of basic mix into a bowl and stir in approximately 7/8 cup milk (or 1/2 c. plus 6 tablespoons) using a fork. For richer biscuits, use half and half, or mix cream with milk.
Turn out onto a lightly floured board and knead for approximately 30 seconds, being careful not to over work the dough.

Roll into a circle 1/2" thick. Cut into biscuits using a floured biscuit cutter or slice into wedges. Place on a baking sheet.

Press centers of biscuits with thumb or the back of a spoon, and brush lightly with cream or milk.

Bake in a preheated 450°F oven for 10 to 15 minutes.

Makes 10 to 12 large biscuits.


ANGEL BISCUITS

1 pkg. active dry yeast
1/2 cup warm water
4 cups all purpose flour
1 cup cake flour
1 tablespoon powder
1 teaspoon baking soda
1 teaspoon salt
3 tablespoons sugar
1 cup shortening
1 3/4 cup buttermilk

Preheat oven to 400 degrees.
Sprinkle the yeast over warm water and sugar, and allow to stand 5 minutes. Add buttermilk. In a large bowl, combine dry ingredients thoroughly. Cut in shortening.

Make a well in the center of the dry ingredients and slowly pour in the buttermilk mixture. Pat dough together and knead gently 10 times.

Do not overmix or the biscuits will be tough.

Roll out to 1/2 inch or 3/4 inch thickness. Cut out circles.

Place on greased cookie sheets with biscuits just touching each other, closely spaced.

Brush with a small circle of melted butter.


CHEDDAR CHEESE BISCUITS

2 cups bisquick baking mix
2/3 cup milk
1/2 cup cheddar cheese, shredded
1/4 cup butter, melted
1/4 teaspoon garlic powder

Heat oven to 450. Mix baking mix, milk, & cheese until a soft dough forms; beat vigorously for 30 seconds. Drop dough by spoonfuls onto an ungreased cooking sheet. Bake 8 - 10 minutes or until golden brown.
Mix butter & garlic powder. Brush garlic mixture over warm biscuits before removing from cookie sheet. Serve warm. Makes 12.


BEST-EVER BUTTERMILK BISCUITS

2 c. all purpose flour
1 tbsp. baking powder
2 tsp. sugar
1/2 tsp. cream of tartar
1/4 tsp. salt
1/4 tsp. baking soda
1/2 c. shortening
2/3 c. buttermilk or sour milk

In a medium mixing bowl stir together flour, baking powder, sugar, cream of tartar, salt, and baking soda. Cut in shortening until mixture resembles course crumbs. Make a well in center of dry mixture, then add buttermilk or sour milk all at once. Using a fork, stir just until moistened. Turn the dough out onto a lightly floured surface. Quickly knead the dough by gently folding and pressing the dough for 10-12 strokes or until the dough is nearly smooth. Pat or lightly roll dough to 1/2 inch thickness. Cut dough with a floured 2 1/2 inch biscuit cutter, dipping the cutter into flour between cuts.
Place biscuits on an ungreased baking sheet. Bake at 450 degrees for 10-12 minutes or until the biscuits are done. Remove biscuits from the baking sheet and serve hot. Makes 10-12.

1/3 cup butter or margarine, cold
3/4 cup milk, cold

1. Preheat oven to 425 F Mix first 4 ingredients together in a bowl.
2. Cut in butter with a pastry blender or a fork, or two knives, until crumbly.
3. Add milk.
4. Stir until it forms a ball.
5. Add a bit more milk if necessary to make a soft dough.
6. Roll or pat to 1 inch thick.
7. Cut into circles with a biscuit cutter or a floured glass.
8. Arrange on a greased baking sheet.
9. Bake in 425 F for about 10- 12 minutes or until risen and nicely browned. (in my oven it usually takes 15 minutes).

There are several types, but the ones I made at church yesterday, 2200 of them, goes like this.
5 cups of flour,2 teaspoons salt, 5 teaspoons baking powder, sift.
Add 1 cup of Crisco, cut in till the mixture looks like corn meal.
Add 2 cups of milk, mix and knead.
Roll out about 1/2 inch thick, cut biscuits, bake at 350 till golden.
This makes 36 biscuits.

At home I use Bisquick or Jiffy mix and just add milk, and make a stirred biscuit, which I droop by spoonfuls onto a baking sheet.

Here is the recipe I use...these are fantastic and certain to disappear from your table!!

2 Cups slef rising flour
1/2 tsp. baking powder
1 Tbsp. shortenting
2 Tbsp. butter/margarine
1/3 cup buttermilk
1/3 cup milk

Preheat oven to 450 degrees. Sift flour and baking powder. Then cut in the shortening and butter. (I do this in the food processor and it turns out just fantastic--with alot less work) The mixture should be grainy like cornmeal. Pour buttermikl and milk into a measuring cup and add enough water to equal 3/4 cup--just a splash. Pour into dry ingredients. Mix lightly with your hands until the dough is moist enough to leave the sides of the bowl. Turn out onto a floured surface and knead about 6 or 7 times, completely turning the dough away from you. Pat out the dough to a consistant thickness (about 1/2 inch) and cut out your biscuits. Bake for 12 to 15 minutes, brush with butter and serve!

To make them homemade without to much trouble, get some house autry biscuit mix and some buttermilk this makes them richer than water. pour some mix into a bowl and some buttermilk, mix to a consistancy that will stick to your fingers and a little wet. next flour the counter top with house autry, and knead dough adding mix until it is soft and not sticking to you. cut out biscuits and place on lightly greased sheet pan, bake at 350 degrees until brown.

Just get some Bisquick and follow the recipe on the side of the box. It's just Bisquick and milk and they come out very well.
