par boil them, drain them well, use kitchen paper if necessary.

Heat oil up in roasting tray in oven, when oil is hot add in potatoes, making sure you coat the potatoes with the oil.

I like to sprinkle some salt on at this stage, you could also add in whole cloves of garlic for taste too..

cook for 25-30 mins, mmmmmmmm lovely and crispy out side with fluffy inside.
