Hooter's Hot Wing Sauce:

1 1/2 cups butter, melted
1/2 cup Tabasco sauce, plus
2 tablespoons Tabasco sauce
3 tablespoons light brown sugar
3/4 teaspoon paprika
3/4 teaspoon salt
1 tablespoon balsamic vinegar
3/8 teaspoon cayenne pepper
2 tablespoons chili sauce
1. Simply mix all the ingredients together very well.
2. Dunk, dip or soak your cooked wings in this sauce.
3. For a change of pace, I will occasionally re-fry the wings after they've been sitting in the sauce, and then dunk them again once they've spent just a few seconds in the deep fryer, crisping up.
4. Serve with ranch or bleu cheese dressing, or whatever you prefer.

Buffalo Chicken Dip: 2(10 ounce) cans chunk chicken, drained - 2 (8 ounce) packages cream cheese, softened - 1 cup Ranch dressing - 3/4 cup pepper sauce, such as Franks Red Hot- 1 1/2 cups shredded Cheddar cheese - 1 bunch celery, cleaned and cut into 4 inch -pieces - 1 box crackers (whole-wheat ones work well with this dip)- Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to an oven-safe dish. Sprinkle the remaining cheese over the top, cover, and cook at 350 degrees until hot and bubbly. Serve warm with celery sticks and crackers. Enjoy!

My wing sauce is just 1/3 cup Lousiana hot sauce, 6 Tbsp butter, and a packet of Good Seasonings Italian dressing mix. (Seriously, that dressing mix is the key, don't leave it out.)
