I love pulled pork but I dont know of many things to do with it besides bbq sandwiches. Last night I made tostadas with it and I have alot left over. I was wondering if anyone had any good recipies with the pork, besides bbq sandwiches! Thank you!

Chili With Pulled Pork

Your pulled pork portions
Salt and freshly ground black pepper
2 T ground cumin
2 T mild chili powder
1teaspoon dried oregano
1 teaspoon ground cumin
1 large onion, diced
1 (12 ounce) can crushed tomatoes
2 garlic cloves, minced
1 ounce bittersweet chocolate, coarsely chopped
2 (15.5 ounce) cans pinto or kidney beans, rinsed (optional)
DIRECTIONS
Adjust oven rack to middle position; heat oven to 450 degrees. Set in pan on medium heat.
Add half the meat. Generously sprinkle with salt, pepper, and 1 Tb. cumin. Increase heat under roasting pan to medium-high. Add other half the meat; and repeat seasonings. Cook until a solid brown crust forms on one side, 4 to 5 minutes. Turn over; cook until a crust again forms, 4 to 5 minutes. Transfer meat to a soup pot. Add 11/2 cups water to the soup pot and cover with heavy-duty foil, pressing down so foil is concave and touches the meat. Seal foil around the top of the pot so it is airtight; place lid on pot. Heat until you hear pan juices bubble. Done within minutes. Carefully remove foil and let cool.

Meanwhile, in a medium skillet over low heat, slow-toast chili powder, oregano and remaining cumin, stirring constantly, until spices are fragrant and darker in color; be careful not to burn. Add onions; saute until soft, 7 to 8 minutes. Add spices, tomatoes, meat and juices. Simmer until flavors are unified. Add garlic, chocolate and optional beans; simmer 5 minutes. Serve.

Pulled Pork Tacos With Tomatillo Salsa
Yield: 1 Serving

Ingredients

4 red bliss potatoes, cooked
-and; slice 1/4 inch thick
1 lb pulled BBQ pork
1 c grated Monterey Jack cheese
8 white corn tortillas
Salt and freshly ground
-pepper
Olive oil

Instructions

Prepare a wood or charcoal fire and let it burn down to embers.

For each serving, lay 1 1/2 ounces of pork over half of the tortilla, top
with potato slices, 1/4 cup of cheese and season to taste with salt and
pepper. Fold over the tortilla and brush with olive oil. Grill for 3
minutes on each side, or until crispy and cheese has melted. Serve with
Tomatillo Salsa.

Yield: 8 servings

ROASTED PORK LOIN INGREDIENTS 3 cloves garlic, minced 1 tablespoon dried rosemary salt and pepper to taste 2 pounds boneless pork loin roast 1/4 cup olive oil 1/2 cup white wine DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Crush garlic with rosemary, salt and pepper, making a paste. Pierce meat with a sharp knife in several places and press the garlic paste into the openings. Rub the meat with the remaining garlic mixture and olive oil. Place pork loin into oven for 2 hours, turning and basting with pan liquids. After 2 hours remove roast to a platter. Heat the wine in the pan and stir to loosen browned bits of food on the bottom. Serve with pan juices.

you could use it on Nachos or in fajitas, or you could replace the meat ina lasagna! Hope this helps! Maybe it will give you a few more ideas.
