Yes you can, but the cookies will have a different texture and color. They will be a little harder/crunchier, taste a bit more like a butter cookie, and be yellower in color. Just use your regular Snickerdoodle recipe and substitute the shortening with all butter. It's a matter of preference. Some people prefer snickerdoodles with a more buttery taste. Some people like the softer texture the shortening gives it. I have made Snickerdoodles many times with both all butter, a mixture of both butter and shortening, and all shortening.

1/2 cup butter, softened
1/2 cup granulated sugar
1/3 cup brown sugar (I used light brown)
1 egg
1/2 teaspoon vanilla
1 1/2 cups flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon cream of tartar
Topping
2 tablespoons granulated sugar
1 teaspoon cinnamon

In a large bowl, cream butter and sugars at high speed.
Add egg, vanilla, and beat until smooth.
In another bowl, combine flour, salt, baking soda, and cream of tartar.
Pour dry ingredients into the wet ingredients, mix well.
Preheat oven to 300° while you let dough rest 30-60 minutes in fridge.
In a small bowl combine topping.
Take about 2 1/2 tablespoons of dough and roll it into a ball.
Roll this dough in the cinnamon/sugar mixture and press onto greased cookie sheet.
Bake cookies 10-12 minutes, NO MORE.
*Cookies may seem undercooked but will develop.
Don't roll your dough into too big of a ball; they may not turn out in that much time if you do that.

60 cookies
1¼ hours 1 hour prep
1/3 cup sugar
1 tablespoon ground cinnamon
1/2 cup butter, softened
1 (3 ounce) package cream cheese, softened
1 cup sugar
1/2 teaspoon baking powder
1 egg
1 teaspoon vanilla
2 2/3 cups all-purpose flour
1 tablespoon butter, melted

In a small bowl, combine the 1/3 cup sugar and the cinnamon and set aside.
In a large mixing bowl, beat the 1/2 cup butter and cream cheese on medium-high speed for 30 seconds.
Add the 1 cup sugar and baking powder.
Beat until combined, scraping sides of bowl occasionally.
Beat in egg and vanilla.
Mix in as much of the flour as you can with the mixer and stir in any remaining flour by hand.
Divide dough in half.
Between 2 sheets of waxed paper, roll each half of the dough at a time into a 12x8-inch rectangle.
Remove top sheet of waxed paper.
Brush half of the melted butter over the dough rectangle and sprinkle with 2 tablespoons of the reserved cinnamon-sugar mixture.
Starting from a short side, roll up into a spiral, removing waxed paper as you roll.
Pinch edges to seal.
Roll in the remaining cinnamon-sugar mixture to coat roll.
Wrap each roll in plastic wrap and chill about 4 hours or until dough is firm.
Using a sharp knife, cut dough into 1/4-inch thick slices.
Place slices 1 inch apart on an ungreased cookie sheet.
Bake in a 375° F oven for 8 to 10 minutes or until edges are firm.
Cool on cookie sheet for 1 minute then transfer cookies to a wire rack to cool.
