Can't beat an easter egg hunt. Also I know of a company that sell Easter crackers if you are looking for an alternative to an egg hunt

I can only consume so many easter eggs and when you're in a large family there are usually a ton of them. It would be alright if the egg hunt didn't turn into some super competitive "I'm the best and got the most" kind of situation but it always did. Give the extra's to homeless people or be realistic and don't waste good food, what does finding eggs have to do with the real meaning of easter anyways?

I don't make easter eggs, because no one in my house will eat them but me. I like to make egg salad or deviled eggs with them when I do, though. Or just put a little salt on them and eat them (without the shell of course....)

Not sure if you mean real, hard boiled, coloured eggs or the foiled covered chocolate ones.
For hard boiled, these must remain refrigerated. So if they have been hidden for too long they may not be safe for eating. If they have been kept cold, make egg salad sandwiches or wraps. Chop them up in a salad or just peel and eat with butter toast.
As for the chocolate kind, my children take care of those before I need to think of a creative way to get rid of any leftovers.

Pickled Boiled Eggs
1 to 1& 1/2 dozen eggs
1 & 1/2 quarts red beets
2 cups water
2 cups vinger
2 cups sugar Salt to taste
Hard boil eggs,cool well and peel. In a large enamel saucepan, begin to slowly heat red beets and beet juice, Add water, vinegar, sugar & salt, Bring all ingredients to a slow boil until sugar has dissolved, then cool until brine is cold. Pour into a large glass jar & add peeled eggs. Let stand overnight in the refrigerator. Serve eggs & beets whole. They will keep in the refrigerator for some time!

I eat them with salt if they are actual eggs. If your kids don't like eggs, you can get little plastic eggs and put candy inside for the kids. BTY, if you do hide eggs, make sure you count them after the hunt, because finding an egg 6 months later is really gross.! lol

Easter eggs, my favorite!! We normally bar-b-que because we can use the eggs for many different things. We make deviled eggs, potato salad and macarroni salad. Also, try making chicken salad, tuna salad, putting them in a regular sald, make egg salad. Egg salad is great on toast or use it as a dip. Egg salad, chicken salad and tuna salad is also great stuffed in celery sticks or stuffed in a tomato. Or just sprinkle with salt, pepper and sasoning salt and chomp away!! Hope I helped!!

Since I am back on my never ending quest for a super figure, I won't be eating chocolate eggs this year, but will paint a few boiled ones just for fun.

I make deviled eggs, egg salad, chop them into a great green salad or just slice them onto a plate and dab a mixture of light mayo mixed with horseradish..sprinkle with paprika, a great snack.
