Please nobody say Thomas Keller. He's an a** to work for, regardless of his star ratings.
I can't spell this, but Georges Vongerichten is at the top of the list. So is Wolfgang Puck, but he's gotten too commercialized.
For Food Network, I still have to go with (I know some people hate him) Emeril Lagasse.

Paul Bocuse, Philippe Legendre, Alain Soliveres, Wayne Hirabayashi, Angelo Sabatelli, Tetsuya, martin Yan,...they are superb. Don't think much of Anthony Bourdain and Jamie Oliver...pathetic
