That's not open minded. An open minded conversation would go like this:
Person 1: Phlogiston is the essence of fire, and it's why things burn.
Person 2: I'll tentatively accept that so we can test it. If you're correct, we should be able to burn a piece of paper in a sealed container and since the phlogiston is destroyed, there will be a loss of mass.
Person 1: Exactly! That's just what you'll find.
Person 2: Hrm, I'm sorry, but one of the key components of your idea is false, so I'm going to have to reject it.
Person 1: Well then how do YOU explain it?!
Person 2: I'm not sure just yet, but your way is shown to be false so I no longer need to give it any consideration.

Being open minded does not mean believing everything you hear or absorbing everthing you are told like a sponge.
It means being open to the ideas of others and willing to examine your own beliefs, taking into account the other ideas that exist in the world. Since Christianity lacks evidence and value for many educated people, they do not blindly follow it. It doesn't mean they aren't open minded- most atheists have explored Christianity at some point in their lives. Hopefully, someday you will understand.

The so-called "open-minded" are not the open-minded peope.
The so-called "religious" are not the religious people.
The so-called "scientific" are not scientific people.
The saying that some people are absolutely right is not absolutely right and cannot make them absolutely right.
Not all believers of all the so-called "religions" are absolutely right.
God Himself holds the absolute truth; we human beings try to compromise with each other in our limited knowledge about relative truth. It is really dangerous if we try to impose on other people our so-caled "absolute truth".
And so on...

Mike: You should believe in (insert philosophy here)
Bob: Really? Tell me why you think I should.
Edit: Sorry you were discussing Christianity.. so here's how the conversation would go from there...
Mike: well.. I think (insert opinions, scriptures, et al)
Bob: ok well, what about (insert bob's question based on what he sees as flaws in that theory)?
mike: (spouts off some twisted scripture to try to make an answer fit)
Bob: ah, well then what about (bob begins to see more flaws in this theory)
Mike: (flustered now) You're GOING TO HELL, MAN.. GET IT??
Bob: uh, no. I was just trying to get an answer.
Mike: Well what if you're wrong??? if you are and I'm right then you go to HELL!!!!
Bob: ah, so you're selling me fire insurance then.
Mike: NO, you should believe because (back to the beginning)
Bob: Well, answer my question then. What about? (original question)
Mike: (back to twisted scripture quotes)
Bob: well, history has proven some things otherwise. What about science?
Mike: That's the devil trying to lure you away.
Bob: I see.. but I don't believe in a devil
Mike: well he believes in YOU!
Bob: I see.. well, oh wow, look at the time. I gotta go man! thanks.

That's not "open minded", that's just a pushover. Open-minded people check out other religions before settling on one. I hardly know any Atheists that didn't start out as Christians, so it's not that people are close-minded about Christianity. It's just that most of us non-Christians know what it's about, we just don't agree with it.

I don't think you understand the meaning of being open-minded.
It does not mean that you have to agree with what the other person is saying, it means that you are open enough to listen without prejudice and without having to start an argument because your beliefs are different. It is about respecting that we are all capable of having our own beliefs and that they are different.
