I was told by someone that raw vegetables contain zero carbs and someone else told me that they are full of carbs? Anyone know the truth. Thanks in advance.

The rule we use (my daughter has juvenile diabetes) is 5 grams of carbs per cup of raw vegies or salad. This does NOT include starchy vegetables like carrotts or corn. Hope this helps.

No vegetables contain zero carbs. Lettuce, spinach, cauliflower, broccoli, celery, avocado, cabbage, mushrooms, green beans, eggplant, summer squash, for example, are low in carbs. If the vegetable is starchy, like potatoes, or sweet, like carrots, will be high in carbs.

If you're talking about stuff like carrots, broccoli, cauliflower, yes they contain carbohydrates, but definitely the good kind. Have at it.

There are so many positives to eating those types of vegetables, especially raw, that I don't even count them when counting calories.

Edited: My answer applied to normal dieting. If you have any sort of diabetic issue, pay attention to mountaingirl above. Also, if that were the case, I would think you would have a glycemic index list taped to the fridge.

Some of them do have carbs, but not a lot. Its not like eating something full of sugar or flour or something like that.

potatoes have lots of carbs, stick with carrots, lettus,and all the other icky veggies. I don't like many but what i like to eat is a no no. Peas, corn, potatoes. If you are a diabeteic I would check with my doctor
