Hummus
1 medium clove garlic, halved
15 1/2-oz. can chickpeas, rinsed and drained
1/2 cup silken tofu (4 oz.)
1/4 cup plus 2 tsp. fresh lemon juice
2 Tbs. peanut butter
1 Tbs. olive oil
1/2 tsp. salt


In blender or food processor, mince garlic. Add
remaining ingredients and blend until smooth. Season
to taste with freshly ground pepper. Transfer to
storage container and use within 3 or 4 days.

Healthy Hummus

19 ounces chickpeas, canned (rinsed & drained)
1/3 cup nonfat yogurt
4 tablespoons Tahini
3 tablespoons lemon juice
1/2 teaspoon ground cumin
1 tablespoon garlic, crushed
3 tablespoons fresh parsley, chopped

Place chickpeas, yogurt, tahini, lemon juice, cumin and garlic in
food processor or blender and process until smoth. Add parsley and
process until ingredients are well-mixed and parsley is finely
chopped. Transfer mixture to a serving dish and chill for several
hours.

Notes: Serve with wedges of pita bread or whole grain crackers.


Spicy garlic hummus
1 (19 ounce) can garbanzo beans, drained
2 tablespoons tahini
2 tablespoons lemon juice
1 tablespoon water, amount as needed
3 cloves garlic, crushed
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 hot chili pepper
Salt, to taste
Fresh ground black pepper, to taste
Paprika, to taste

Process garbanzo beans, tahini, chili pepper, garlic, and lemon juice in a food processor or blender (I use a mini-chopper) until smooth.

Add water as needed to achieve the consistency you prefer.

Place mixture into a glass bowl.
4.
Stir in cumin, cayenne pepper, paprika, salt and black pepper.
5.
Cover and refrigerate for at least a couple of hours.
6.
The flavor improves greatly if given this time to develop.

Water

In a food processor bowl combine chickpeas, tahini, and garlic. Add olive oil, lemon juice, and salt. Process until smooth, adding enough water until hummus is same consistency as thick oatmeal.

Note: Tahini, a puree of sesame seeds, can be found in large supermarkets, Middle Eastern markets, or other specialty food stores.

Instructions

* Liquid shoud be 1/4 of the liquid from 1 can of chick peas. ** Tahini is (seame seed paste) is available in Milddle Eastern Food Shops and many of the larger supermarkets featuring Ethnic Foods. Combine all ingredients, except garinshes, in blender or food processor container. Blend to a smooth, creamy paste. Taste and add mor lemon juice or salt to suit your taste. It should be the creamy consistency of mashed potatoes. Thin with chick pea liquid or water if necessary. Scrape into an attractive bowl, Color olive oil with a bit of paprika. Drizzle oil over the surface in a decorative pattern and sprinkle with parsley. Serve with wedges of pita bread and raw vegetables.

Homemade Hummus:

30 min 30 min prep
1 1/4 cups

1 (15 1/2 ounce) can garbanzo beans
1/3 cup toasted sesame seeds
1/4 cup fresh lemon juice
1/2 teaspoon garlic powder (or to your taste)
1/2 teaspoon salt
2 tablespoons corn oil or olive oil
1 dash hot sauce

1. While garbanzo beans are being drained,Place sesame seeds in food processor and process till very finely ground.
2. Add the drained garbanzo beans and process till puree'd.
3. add lemon juice,garlic powder& Salt,and process till smooth.
4. Add oil and Hot sauce,and process till well blended.
5. Let stand 1 hour at room temperature to blend flavors.
6. Serve with your favorite dippers.

2 cans chickpeas (regular sized cans, drained and rinsed)
Juice from 2 lemons
2 Tablespoons of Tahini
1 clove garlic
Salt to taste

Place all ingredients in the food processor untill really fine. At least 5-10 minutes in the processor.
Serve in a bowl with a drizzle of olive oil over it.

whatever you do, don't substitute peanut butter for tahini. Tastes terrible, and I consider it my first culinary failure...Some people suggest this but you will not have the same dish...The recipes currently posted should give you a good start, just taste and adjust according to your preference. For example, my husband only likes hummus when it has enough garlic in it to almost hurt you : )

Super easy.

1 can chickpeas
1 tbs tahini (sesame paste, from health food store)
2 tbs extra virgin olive oil
salt and pepper to taste
squeeze of fresh lemon
(optional-garlic, herbs, roasted red pepper)

whiz up in blender or food processor. serve with pita bread, crackers or raw veggies
