You can use fromage frais just as you would use cream cheese. I love it as a topping on plain pancakes mixed with blueberries.
You can use any fruit - sliced papaya, mango, banana, or pineapple.
You can also make the pancakes with the fromage.
2 eggs
5 teaspoons all-purpose flour
1 1/2 teaspoon sugar
1 teaspoon butter, softened
8 ounces fromage frais, softened
Lightly beat eggs in large bowl. Add cheese, flour, sugar and butter. Mix until well combined. (Mix will be slightly chunky). Spray a preheated griddle with vegetable cooking spray and spoon batter onto griddle. Cook pancakes until golden, about 3 minutes. Turn and brown other side about 2 minutes more. Sprinkle pancakes with powdered sugar. You can serve with fresh berries, warm applesauce, or maple syrup.

Quite an unusual pancake
Buckwheat Pancakes with Purée of Swiss Chard
The secret when cooking swiss chard is to make sure the stalks are well cooked before adding the leaves. This strongly flavoured vegetable goes well with the equally robust buckwheat. This recipe could be made with spinach.
Ingredients
For the filling:
1½lb / 770g Swiss chard
2oz / 50g butter
4 tbsp fromage frais
salt and pepper
For the pancake batter:
½pint / 300ml milk
1 egg
1tsp oil
2oz / 50g buckwheat flour
2oz / 50g wholemeal flour
pinch salt
a little oil for frying
sesame seeds for garnish
Method
1. First prepare the pancake filling.
Wash the chard leaves and remove the stems.
Cut the stems roughly and boil for 10 minutes.
Drain.
2. Melt the butter then add the cooked stems and leaves and cook for 10 minutes or until the leaves are soft.
3. Purée the mixture in a food processor or blender. Mix in the fromage frais and season well. Keep the filling warm while you prepare the pancakes.
4. Using a food processor or blender, mix the milk, egg and oil together for 30 seconds. Then add the flours and salt and blend again until smooth.
5. Using a small, preferably non-stick pan, heat a little oil and when the pan is smoking add 2tbsp batter and fry the pancake for 2-3 minutes on either side.
6. Fill each pancake with the vegetable puree and roll up.
Sprinkle on some sesame seeds and serve hot accompanied by a mushroom or tomato sauce.

Dessert Recipes - Strawberry and Orange Pancakes Recipe
Ingredients
1 quantity of Simple Pancakes
3 oranges
100 g/4 oz strawberries, sliced
30 ml/2 tbsp sweet vermouth
45 ml/3 tbsp fromage frais
1 quantity of Smooth Strawberry Sauce

Method:
Make the pancakes and keep warm on a plate over a pan of hot water.
Holding the oranges over a small saucepan, cut off all the skin and pith, then cut the fruit into segments both sides of the membranes.
Place the segments in the saucepan. Add the strawberries and vermouth. Heat through but do not boil.
Put a spoonful of fromage frais on each pancake. Divide the fruit mixture between them and fold each into four.
Transfer to warmed serving plates and drizzle a little Smooth Strawberry Sauce over each and serve straight away.

Finely grated rind of 1 lime

4 whole strawberries, to decorate

Make the pancakes. Mix together the strawberries, bananas and lime rind and divide between the pancakes.
Roll up and place on serving plates. Top with a dollop of fromage frais and dust with sifted icing sugar.
Decorate each plate with a whole strawberry.
