This is a great recipe for ground Italian Sausage. It is trying to imitate a soup at Olive Garden called Zuppa Toscana. Try to use a high quality ground sausage or make your own if you have a meat grinder (a great attachment to a stand mixer if you're considering it).
1 lb. ground Italian Sausage
2 large baking potatoes, washed (skin on) and sliced into 1/4 inch (or thinner to your taste) slices. These look good if sliced on a bias.
1 large onion, chopped
6 slices of Bacon, chopped and cooked
2 cloves garlic, minced
2 cups chopped kale
2 cans of chicken broth (or use homemade)
1 quart of water
1 cup of heavy cream
Salt and Pepper to taste
Cook sausage on a baking pan in a 300 degree oven for approximately 1/2 hour, then remove to paper towels to drain. This can be browned in a skillet, but the oven does a great job for this use.
Place onions, potatoes, broth, garlic, and water in a large pot. Cook on medium heat until the potatoes are tender.
Add sausage, bacon, salt and pepper and simmer for 10 minutes. Turn heat to low and add Kale and Cream. Heat through.

Two of my favourites (serves 3-4 depending on hunger):
Stretched sausages:
3 large onions
A little oil or butter
500gm/half a pound of sausage meat made into patties
3 green-skinned apples
2 tablespoons brown sugar
2 tablespoons wine vinegar
Half a cup sweet Thai chili sauce
Seasoning to taste.
Cut the onions into wedges and fry slowly (as little oil as possible) until golden-brown. Add the sausage patties and start the browning process. Pour off any fat.
Peel and quarter the apples and add these to the pan. When they start to get soft, add everything else and simmer slowly (add water or stock to taste, thicken with cornstarch if you feel you need to).
This is delicious and *very* economical.
Alternatively, if you can get hold of some tamarillos ('tree tomatoes) you can make a very similar dish substituting the tamarillos for the apples, and you could use Tabasco sauce instead of the Thai chili sauce. Skin the tamarillos first. I used to cook this when I lived in New Zealand - where tamarillos grow freely - and it's marvellous.

Fry the sausage. Reserve the grease. Remove and save sausage. Sautee assorted peppers if available and sliced onions. Once done cooking add the sausage to it. Serve over white rice or as a side dish.
You can also make hash browns by grating potatoes and adding the above ingredients if you dice instead of slice and fry til golden.
You can add the sausage to spaghetti sauce.
You can take ground sausage and make them into patties and fry.
Try cooking the ground sausage and adding it to cream cheese and using it as a spread for a bagel or pita bread etc...

Italian Sausage Stromboli (Aka Sausage Bread):
55 min 15 min prep
16 slices
1 lb frozen pizza dough, defrosted
1/2-3/4 lb Italian sausage
1 green pepper, 1/4 inch wide slices
1 medium onion, 1/4 inch wide slices
italian seasoning
1-1 1/2 cup mozzarella cheese
2-3 tablespoons grated parmesan cheese
pizza sauce (optional)
1. Lay pizza dough on a lightly floured surface so it can rest.
2. Slice Italian sausage into 1/2 inch slices; fry in a 10" skillet over medium heat until browned, about 10 minutes.
3. Add 1/2 cup water, peppers and onions; bring to boil and cover.
4. Reduce heat to low and cook about 5-10 minutes more, or until veggies are tender and sausage is heated through.
5. Drain liquid from skillet and sprinkle sausage mixture with Italian seasoning; set aside.
6. ***If you have leftover sausage, onions and peppers, like I did, you just need to warm it up***.
7. Preheat oven to 375 degrees and spray a baking sheet with cooking spray.
8. Roll pizza dough (on a lightly floured counter) into a rectangle, approximately 11 x 17.
9. Sprinkle with sausage mixture, then the cheeses.
10. Start at the bottom of the long side and roll jellyroll fashion, stopping occasionally to stuff sides it. When you get to the end, pinch seam together, trying to squeeze air out as you go.
11. Place seam side down on baking sheet; bake for about 25 minutes at 375 degrees.
12. Remove from oven and lay a clean dish towel on top of loaf; this will allow the crust to soften up and it will be easier to slice and eat.
13. After about 10 minutes or so, slice into 1 inch slices. Serve with warmed sauce for dipping, if desired.
14. Enjoy!

I make these a lot and they are really yummy. My bf said it didn't sound like it would be good, but once he tried them he really liked them.
Ingredients:
6-8 Large Potatoes
1 lb ground sasauge
2 cans cream of mushroom soup
salt & pepper to taste
3-4 slices Kraft American Cheese (optional)
Preparation:
Preheat oven to 450
wash and dry potatoes rub with vegetable oil or shortening. Wrap each potato in aluminum foil and bake for 45-60 minutes until tender when a fork is inserted.
Remove potatoes from oven and allow to cool for a few minutes.
Brown ground beef and drain. Cut each potato in haly length wise and scoop out the middle and put into a large bowl. Add sausage, cream of mushroom soup, mix until blended salt and pepper to taste. Spoon mixture back into potato skins put onto a baking sheet. Top each half with a half a slice of cheese. Bake for 10-15 minutes at 400 until heated through.
Notes:
Depending on the size and amount of potatoes used yu may need more or less cream of mushroom soup. Also you can omit cheese or substitue for cheddar.

Spicy Sausage Yogurt Surprise
1 large Mexican or other spicy sausage
2 cups plain or fruit flavored yogurt
1 cup bran flakes
salt to taste
Grind sausage into a fine powder using heel of shoe.
Blend into yogurt slowly until mixture is the consistency of toothpaste.
Sprinkle bran flakes on top.
Add salt.
Bake in an open dish at 400°F for 45 minutes.
Allow to cool before serving.
Makes 6 servings.

Stuffed Peppers
INGREDIENTS
6 large green bell peppers
1 pound ground sausage
1 large onion, chopped
2 (10.75 ounce) cans tomato soup
2 2/3 cups water
1 tablespoon chili powder
1 tablespoon garlic powder
salt and pepper to taste
1 pound Cheddar cheese, shredded, divided
3 cups uncooked instant rice
DIRECTIONS
Slice tops off of green peppers; remove seeds and membranes, and rinse well. Bring a large pot of water to a boil. Add peppers and cook for 15 minutes, or until tender-crisp.
Place sausage and onions in a large, deep skillet. Cook over medium high heat until evenly brown. Reduce heat to medium and stir in tomato soup, water, chili powder, garlic powder, salt and pepper; bring to a low boil. Reduce heat to low, stir in 3/4 of cheese and simmer for 1 hour.
Meanwhile, preheat oven to 350 degrees F (175 degrees C).
Prepare instant rice according to package instructions. Fluff with a fork and then stir into tomato mixture. Simmer for 30 minutes.
Spoon rice mixture into peppers.
Bake in preheated oven for 30 minutes. Sprinkle remaining cheese on peppers and place under broiler until cheese is melted and bubbly.
