What should I pack clothes wise? Will it be sundress and shorts weather or more 3/4 length trousers and t-shirts? Also, does it get cold at night - should I be packing jeans and light fleece tops?

I just came back Sunday - take a jumper !!
Its nothing like Gran Canaria which has consistent weather. Lanzarote at this time of year can be a bit hit and miss.
Our first 2 days were cloudy - we were in Costa Teguise - and we had to drive to the other coast - Famara - for some sun.
The next 3 days were lovely. The last 2 were cold ! jeans and jumper. And jacket at night.
It should get better over the next few weeks though. Take a pair of jeans and a fleece - better to have and not need them, than to need them and not have them.

A friend returned yesterday and said it was very hot, so a bikini will be ok, and your shorts etc. I have been twice it gets windy at night so a jacket for taking out with you. I never felt the need for jeans went nov and dec. Bit of advice if you dont mind I know you didnt ask but visit the home of a local artist Cesar Manrique, it is fantastic also his famous Jameos Del Agua. Get a guide book and have a nosy see if its your thing. We loved it.

This is the BBC weather page for Grand Canary, so not far away. Looks nice. I'm going in late May for a week's diving.
It doesn't get cold at night, just a bit fresher, you may want a light top to put on.

At the moment the temp is around 69 degrees like our summer really but gets chilly on a night
