El Dorado Rum, (10 year is favoured for best flavour without losing taste in cooking)
suitible for a variety of alcohol poached/flambeed food.
El Dorado is voted the worlds best rum, it is from Guyana, South America produced from the finest Demerara sugar from the Demerara region, Guyana (not Mauritius), produced by Demerara Distilleries Ltd, Guyana. I would recommend trying to stock this in the UK.

I find almost any liquid is good for poaching, it really depends on what you're poaching.
For red meat, I'd recommend Guiness. For white I'd recommend whit wine. For fish I'd go for lemon juice. For veg. I'd use a meat stock. For eggs I'd use water or milk.
But that is just my opinion and taste.

If you have a large ham/gammon joint, stud it with a few cloves and poach it it coca cola(the real stuff not an alternative brand).
You will get a wonderful deep smoked/sweet taste. It is important to baste it from time to time.

it depends on what food you are poaching, but the following beverages- champagne, wine, diluted fruit juices, beer, water, tomato juice all work to impart more flavor to the food.

any kind of wine, also vinegars are good for poaching. such as white vinegar, red wine vinegar, etc. i have also found that citrus juices work well also when mixed with the water. personally i think that white wine and lemon juice work well.

milk for fish
try cooking carots in orange or lemon juice
eggs are yummy in tomato.
you can use any liquid to poach just experiment, meats are nice done in alcohol (beef in red wine or beer)

red wine. you can poach pears in red wine for a lovely pudding. serve with whipped cream

Milk - for smoked cod/herring (kippers)
Cider - for pork/chicken
Red/white wine - chicken
Port - duck/venison
Red wine - red meat
Beer - mussels/pork
White wine - salmon steaks
I would go on, but my mouth is watering too much!
