ones to do in the office (every hour or so):
1. hold your hands out in front of you and lace your fingers together. flip them over (so your fingers face you) and push out.

2. open your hands and push out through your fingers. then close your hand tightly into a ball. holding each for 10 sec.

stuff to do at home.
get a grip ball, can of soup, or something handheld with some weight. squeeze the object and rotate your wrist. alternate directions. 5 reps.

carpal tunnel is caused by repetitive motion. just mixing up your motions while at work can help a lot. don't forget to get an ergonomic keyboard and mouse and to adjust your seat to the proper height (ie. elbow at rest on the desk and not reaching up for the mouse)

Hapkido, Kung Fu, Jeet Kun Do... anything like that would be good for combat against the evil carpel tunnel.

Also rotating your wrists by making small circles with your hands every 10 to 15 mins will help too
