I have a couple for you --
Easy Taco Casserole

Recipe Summary
Preparation time: 30 minutes
Number of servings: 8

1 lb extra-lean ground beef
1/2 tsp garlic powder
2 cups low-sodium tortilla chips

3/4 cup grated fat-free cheddar cheese

1 16-oz can stewed tomatoes
1 tsp sugar
3/4 tsp dried oregano
1/2 tsp Worcestershire sauce
1/4 tsp pepper
1/2 tsp hot sauce
1 16-oz can corn niblets, drained
1 cup green bell pepper, chopped
1 cup yellow bell pepper, chopped
1 cup onion, chopped

2 cups lettuce, shredded

Cook ground beef until browned, and drain. Stir in garlic powder. Coarsely crush tortilla chips and place in bottom of ungreased 8-inch square pan. Spoon hot meat over chips. Top with cheese. Bake at 350 degrees F for 10 to 12 minutes or until heated through.

While casserole is baking, prepare taco sauce by stirring together the next 10 ingredients. Break up large tomato pieces.

Remove casserole from oven. Sprinkle casserole with shredded lettuce; pour on taco sauce, and serve immediately.

Taco Bake without shells

1 can each: black beans, corn, kidney beans, drained and rinsed
1 jar salsa, drained
1/2 cup each: chopped onion and chopped green pepper
Squirts of lime juice
Onion powder, salt, pepper, and garlic salt (as desired)

Preheat oven to 350 degrees. Spray a 13x 9 pan (glass or metal) with shortening. Then, layer each ingredient into the pan in the order listed above. Season according to taste.

Cover with aluminum foil and bake 20 minutes.

Remove from oven. Turn heat up to 400 degrees. Remove foil, and top with 2 cups of shredded cheddar cheese. Return to oven, and bake an additional 10 minutes, or until cheese is melted and bubbly.

Serve topped with sour cream in a bowl. You may also serve with corn chips, or on a bed of mixed greens and lettuce.

Beef Taco Bake:

4 servings

1 lb ground beef
1 (10 3/4 ounce) can condensed tomato soup (I prefer Campbell’s)
1 cup salsa (I prefer Pace Picante Sauce)
1/2 cup milk
6 flour tortillas, cut into 1 inch pieces
1 cup shredded cheddar cheese

1. BROWN the ground beef in a medium skillet over medium-high heat; Stir to separate meat; Pour off fat.
2. ADD and mix soup, salsa, milk, tortillas and half the cheese; Spoon into 2-quart shallow baking dish; Cover.
3. BAKE at 400F for 30 minutes or until hot; Sprinkle with remaining cheese.

1 lb ground beef
1 envelope taco seasoning mix
1 can (14 oz) tomato sauce
1 can (15.25 oz) corn
2 cups shredded cheddar cheese

(corn bread topping)
1 box jiffy corn muffin mix
1 egg
1/3 cup milk

Heat oven to 325 grease a casserole dish.
Brown meat drain. Stir in taco seasoning, tomato sauce and corn. Spoon into pan, sprinkle with cheese. Mix together corn bread topping ingredients until smooth. Pour over beef mixture.
Bake about 35-40 minutes or until knife inserted in center comes out clean. (remember that the cheese is right under cornbread so if knife is not clean make sure it isn't the cheese)


You can top with sour cream if desired,

I'm a Tamale Pie fan myself, but that includes cornmeal, not tacos. Anyway, consider layering corn tortillas with shredded cooked chicken, a sauce made from cream of mushroom soup, cream of celery soup and cream of chicken soup (mixed with sour cream, milk, and a can of diced green chilis), shredded cheddar cheese and repeating until you end with soup and cheese. Bake at 350 degrees until cooked thru and bubbling. Good stuff and easy to make!

I like adding prepared meat, and all the veggies like peppers, onions, etc ...as well as frozen corn...to a cornbread batter, and let it bake in. Bake in a casserole. Sprinkle with cheese after baking, add fresh lettuce, tomatos, sour cream.

Yummy.

You could also make a lasagna but instead of flavoring everything with Italian style spices, use Mexican cheeses and spices...maybe instead of the marinara use enchilada sauce. with meat in it.
