I am just looking for some ideas on some quick, low-fat recipes, or food items that don't include vegetables, except green beans or mushrooms she actually likes those. Any ideas would help, thanks!

Does she like fruit? I love fruit salads, they are quick to make and really low in calories. Get some of her favorite fruits - try 1 banana, 1 apple, 1 mango, 1 peach, 1 plum - chop them up and mix them, and sqeeze a lemon to pour over. It is delicious and so good for you. My husband and I eat them once a day for lunch. But why not dinner?

Otherwise look into egg dishes. Eggs are filling and relatively low in calories. Scrambled eggs (just be careful about the oil), boiled eggs, poached eggs, omelettes with mushrooms, fried eggs are all great. Serve 1 or 2 eggs with healthy bread. And stay away from all white bread! But healthy dark bread, preferable 100 % rye bread is really good for you and filling.

Lowfat cottage cheese is great.

Tuna in water is great. Again serve on rye bread or healthy seed loaf.

Legumes (chick peas, kidney beans, lentils etc) are great to get into. They are very healthy and good for you. You can buy them in packets cheaply and boil them yourselves - very inexpensive compared to buying them in tins. They are high in calories but very filling. Maybe she will like fresh herbs such as basil, parsley, mint etc, they go really nicely with legumes.

You can make meals with lean meat - chicken breasts without skin, lean pork steaks, lean beef, any fish, and serve the meat with legumes. Very healthy and nutritious meal.

Turkey mince or very lean steak beef mince can be used for a variety of dishes. Serve with a little bit of pasta or rice (preferably whole wheat).

Just remember to watch your fat intake at all times - butter and oil are extremely high in calories, and it doesn't take a lot to mess with a diet. If you use it use a teaspoon to measure the amount, and never use more than 1 teaspoon per person at a time.
Stay away from prepared food, and stick to "live food", food that hasen't been processed in any way.

I also suggest you pose the same question under the food category, I am sure people there will have some more ideas.

Have fun! If you both can get into the diet and discover new recipes together it will be a lot of fun to do it together. Prepare your meals together and have fun with it, try new tastes and cuisines (asian, middle eastern, indian) to spice up a diet. Healthy food is fun food! And don't call it a diet - call it a lifestyle change and stick to healthy food for life.

Yes. Tell her to just continue eating what she likes, but in moderation (usually a cup-size equivalent of each food item). Or, if her diet is unhealthy (constant fast food), then she can continue the beans and mushrooms, and replace the unhealthy diet with whole grains (brown rice), dairy, protein (eggs, fish, nuts, etc.) and fruits (a good fiber source, and she can do a variety of things with it - make smoothies, or just snack on a piece of fruit or a make a fruit salad). Advise her to start taking a good multivitamin supplement to ensure that she gets the vitamins she lacks on a diet without vegetables.

Try Cooks.com or some other sites.......... she's going to have to experiment and find veggies she likes as she will get bored with jsut the 2, and most low fat recipes are not going to exclude a veggie.
I'd recommend trying artichokes, asparagus, something that is really rich and good like that............brussels sprouts are my personal favorite but I know I am an exception. Maybe you could go together to a produce stand or farmers market and have her pick out some type of fresh veggie that she thinks is interesting enough looking that she would try it? (These are all tactics I use on my 3 year old, but sounds like you are dealing with the same mentality)

Give her time. Her taste buds need to be retrained. See if she will try 1 new vegetable every couple weeks. Good thing about it is that we live in such a place that we can pick and choose what vegetables we eat. Many countries aren't so lucky.

Just advise her to take vitamin pills, it's not going to be the same, but hey, at least she'll get some use out of it to keep her body running :)

dude,i have the exact same problem!im not a picky eater so it bugs me extra bad.now,im not a piggy or nothin,but i hate when people poke at their food and pull it all apart then leave a pile of peas she cleaned out of my sauce i made.thats the other thing,i do the cooking so it pisses me off.but anyway,i employ the "hey,fattie" technique.i call her fat and frequently roll her around on the floor and stuff.sometimes i make her do dances like the truffle shuffle to further amuse myself.
