I make a white southwestern chili that is really wonderful. It's ground turkey or chicken, low sodium chicken broth, onions, garlic, green chiles, white beans (navy, cannelli, or great northern), and seasoning. Low fat, low sodium and if you want you can add in carrots to make it more stew like.
I have a 5 quart slow cooker going right now with it.

We love "salad mix". Basically it's marinated raw veggies. We use european cukes, carrot slices, peppers ( all colors ), mushrooms ( canned, because for some reason, raw ones get nasty ),celery, radishes, oh, any raw salad veg..
I make a huge tupperware container of it, pour on a bottle of non-creamy dressing and shake a few times over a day.. Best the next day.. We use Brianna's blush wine vinagrette, or Ken's Italian. ( Both with the oil poured off ! ) You eat it in a bowl by itself, or over leafy greens.
We like a shake of parmesan over the top.
A bowl can last a week with an hours prep.
