Stop catering to them. They know it upsets you when they don't eat, and they know you will make some something else. In my house I make 3 courses for dinner. The main course and 2 veges or a fruit and a vege. That is what they have to eat. If they don't like something, fine, but I"m not making something different for them. They eat what they get or the don't eat. I have a 5 yr old son and a 7 yr old daughter, and there's not too many things they don't like. Even if I make something they don't like, they have to try a bite before they can tell me they don't like it. My sister did what you did and now her kids are 12 and 15 and she is still stuck cooking 2 or 3 different meals for dinner.

First of all - children's tastes change during their lives, so even though he doesn't like veggies now doesn't mean he won't eat them next year - don't worry too much. However, there are some tricks to try with picky eaters (tested on my own). Each plate has a little portion of every meal item - no choice. Each item doesn't need to be eaten, but it needs to be on the plate. Studies have shown that most children (probably people) will eventually try a food after they have been offered it over and over (and over...). Next, don't force the kids to "clean the plate" - this only makes meal times feel like punishment - no fun. Eating should be fun. Let the kids pick fun "condiments" like sprinkles on their sweet potatoes, etc. - whatever might convince them to try something new (just a little sprinkles) :) More tips are in the 2 links I am adding below. Good Luck!
Oh - and offer fresh veggies and fruits as snacks throughout the day instead of chips and candies. Kids like raisins, celery sticks with peanut butter, carrot sticks, etc.

its better for a kid to eat meats and starches and take a vitamin than to be a vegetarian. what are you thinking? no, you cant feed them cheese and peanut butter to replace meats, thats what weirdo veggie nutritionists will tell you. your kids need to be healthy, not follow your wacky belief system that you have developed as a trendy way to make some sort of a statement. sounds like maybe hes rebelling already against your 'need' for him to follow your veggie rules.

my cousins only eat plain bagels and plain spaghetti. no fruit or vegetables at all, not even french fries. their mom talked about it with a nutritionist who said that nowadays everything is so fortified with nutrients that they'll be fine, in time they will probably begin to eat like normal people.
