I love to throw a nice pork roast into the crock pot. I put sliced onion in the bottom, toss the meat on top, drizzle some BBQ sauce on top, and let it cook all day long. By the time I come back, the meat falls apart in delicious little ribbons, at which time I toss in more sauce, and serve on rolls. Yum!

Weight Watchers Mexican Chicken
1 can of Rotel
1 can of Mexicorn
1 can of black beans
4 chicken breasts
Salt and pepper chicken and place in the bottom of the crockpot. Pour contents of all three cans on top of chicken. Cook on low for 4 hours. Serve over white rice.
This is amazing and couldn't be more simple. And its healthy too!! Comes from a Weight Watchers cookbook!

Slow cooked peppersteak. There's steak, peppers, tomatos, garlic, ginger, soy sauce. You serve it over rice and it is sooooo good! My husband loves it and so do I.
