Well first you wear an extra short skirt so that you can rest the potatoes on your thigh. Then you wet the potatoes and let the dirdy brown water trickle down your leg. Then you get your peeler and delicately graze it over the small round potato, peeling back that skin until you see the pure white flesh.
Then you chop 'em and fry 'em!

The best method would be a hollow stool which legs encircle the stove & the frying vessel placed with a height of at least 1 feet above the frying vessel. Fix the chips cutter on the stool so that the chips sliced would fall directly into the frying vessel. Thats all now pour the oil and light the stove. When you think that oil has sufficiently become warm now start slicing the chips so that they directly fall into the vessel after slicing enough you stop and start stirring the chips with a long spoon / ladle. This way the chips do not get stuck and you will get good crisp chips.

ULTIMATE RECIPE: Put your favourite spices in a bowl with milk - I use paprika, chilli powder, cumin and mustard seeds (crushed). Soak thickly cut chips in the milk for at least 4 hours.
Heat vegetable oil to 130 degrees, fry the chips until they soften a little. Then turn up the heat to 190 degrees and finish the chips unti lgolden brown. One word: unbeatable

Peel potatoes and put in a bowl of cold water to cover. Pat 1 potato dry. Using a mandoline or other manual slices cut potato into paper-thin slices (about 1/16 inch thick) and let potato slices stand 5 minutes in another bowl of cold water to cover.
Drain potato slices and spread without overlapping on a triple layer of paper towels. Blot slices completely dry with another triple layer of paper towels.
In a 3-quart saucepan heat oil until a deep-fat thermometer registers 380 F. Working in batches of 8 to 10 slices, fry potatoes, turning once or twice, until golden, 1 1/2 to 2 minutes, making sure oil returns to 380 F before adding next batch. Transfer chips as fried with a large slotted spoon to paper towels to drain and sprinkle with salt. Continue to pat dry, cut, dry, and fry remaining potatoes in same manner. Potato chips may be made 2 days ahead and kept in an airtight container.

i prefer to make homemade chips my self, i usually wash the potato and slice into regular sized chips (with skin still on as it is full of nutrients) and then place on a baking tray drizzle a bit of olive oil over them and cook on gas mark 5 for 30 minutes turning them over half way through cooking. I dont like to fry them as 1. thats really unhealthy especialy if you are feeding them to children and 2. they seems to burn and go all yucky. Good luck and njoy :)

cut the potaoes into chip shapes, part boil for bout 10 mins, drain the water off then cover with olive oil and sea salt, put on a baking tray then cook in the oven on a really high heat til they are brown enough for ya. as a healthy alternative try sweet potato they are tastier and cook quicker (you dont have to part boil them just chuck 'em in the oven) enjoy x

first peel your potato maris piper are about the best taste if not king eds, cut into pieces as thick as my finger and as long as you can get them, boil until they are just about cooked not to soft pour out the water through a sieve or you will end up with them all in the sink or the bath depends on where you are, leave to cool off then get your oil as hot as you can before putting in the potato pieces(not yet chips)fry until they are turning brown, but for taste and you are not a veggie cook in beef fat if you can get hold of it from your buchers (dripping)

Make sure you use good pots, king edward etc. cut them equally, rinse them then dry really really really well with a clean teatowel. The best thing to fry in (but the most unhealthy) is beef dripping, you can get from asda. put in deep fat fryer but make sure it is really hot enough first (test with one chip) dont try to cook to many at once
