Swiss Breakfast

This Swiss Breakfast recipe has a great tasting combination of flavors that give you both natural sweetness and tartness. It is good served hot or cold, making it a good, comforting meal all year round. It’s worth making a big batch to have on hand.

Prep and Cook Time: 10 minutes

Ingredients:
4 cups oats
1 tsp cinnamon
½ cup raisins
½ cup sliced almonds
½ cup dried apricots chopped
½ cup sunflower seeds
4 chopped dates
¼ cup dried cranberries

Directions:

Mix all ingredients together. The above amount of ingredients will make about 8 servings. This can be kept so it's ready for future use.

For 2 servings bring 2 cups water to a boil. Add 1 ¼ cups Swiss Breakfast. Turn heat to low and cook uncovered, stirring occasionally until water is absorbed, about 7 minutes. Cover, and set for about 2 minutes before serving. Serve with a touch of low fat milk or unsweetened soy milk.

Healthy Cooking Tips:

Make sure you use rolled oats for this recipe. It has the best consistency for this application.

Well, you can't beat biscuits and sausage gravy with scrambled eggs. I just crumble the sausage in a pan and cook it then I make a country gravy (either from scratch or buy the mix) then while I'm doing all this I am baking the biscuits (either store bought or make 'em yourself) then scramble the eggs as usual. I always serve with fruit or orange juice and coffee.

i make what i call a breakfast quiche...pour some frozen hash browns in a skillet. cook it down, then add ham, mushroom, onions and cheese. in bowl, beat eggs and then pour the egg mixture over the hash brown. Cook it like an omlette.

sorry i don't have exact measurements. I kinda just eyeball everything.

I love to scramble eggs with just about anything you have on hand. Maybe diced ham, franks, corn tortillas, veggies, or more than one thing. Think omelets, but scrambled. It takes me about 10-15 mins. to prepare breakfast this way on busy school mornings.
