Pergo now makes several laminate floors that will meet insurance co. standards for use near a fireplace. I installed a laminate floor around a large rectangular fireplace that was standing in the middle of a room about a year ago. It's going to be difficult to get clean, neat edges if you have a stone fireplace.
If your fireplace has a smooth surface at the bottom, you can use a pencil compass to mark the curved cuts. If not, there will be a bit of trial & error involved. Once you get a cut that looks good, lay it first and work away from the fireplace. This is an interesting question and I hope the job goes well for you.

No can do. You'll be breaking fire codes if you put it within 3' of the fireplace. You'll need to put slate or tile there (something non-flammable) and put the laminate around that. Otherwise, you'll negate your homeowner's insurance and if your house burns, they won't cover it because you violated standard codes.
