I mean, why not just have a Creator of the Universe who has no idea what the future holds nor what we are doing?

Because we don't choose the Creator, the Creator chooses us.

The creator doesn't have to be omniscient is just that he is. He is the one who created and happens to be omniscient, omnipotent, and omnipresence. Thats all. If we would have been created by someone or something else that was not omniscient then that would be the case wouldn't it.
It is impossible though because the only one with the power to be the almighty God is in fact God- the alpha, and the omega.

Omniscience rules out free will.

Also, it implies that god intended everything to happen. No matter what it is, god meant for it to happen, and he knew about it from the beginning.

WWII, 9/11, Terrorism, were all intentionally caused, because god knew about it from the beginning and didn't alter his plan... This, however, directly contradicts god's benevolence. Therefore, the god of the bible doesn't exist.

the real creator... is omnicient
omni-science if you will

does He have to be by virtue of being creator
not necessarily... but the creation would be somewhat out of control under those conditions
He happens to be, in reality, omnipressent, omniscient and all powerful, for starters

Since we had to make up a Deity to solve all of our unanswered questions and issues anyway, making it omniscient and omnipotent made it a lot easier, at no extra cost.

I think if He created something this significant, He should know where it all is going to lead, meaning He should have a predetermined plan of sorts.
