I am cooking a vodka sauce and it seems to be very watery even with the heavy cream!! I followed all directions! :(

yes heavy cream will make a sauce thicker. perhaps you just need to reduce the sauce more before you add the cream. Also to finish the sauce add some whole butter cut into cubes this will slso help thicken the sauce. You can use another thickening agent if you go this route the sauce has to be thickened before adding the cream, because it has to be boiling for a slurry of arrowroot and water (1st choice) or corn starch and water. After the slurry has been added and thickness has been acheived then reduce the heat and add your cream.

The answer to your question is yes. Heavy cream thickens, makes things taste richer and creamier. You have to just cook it down (reduce) without boiling it to get it to the right consistency.

try to boil out a bit of water from the heavy cream before adding the vodka

but wondra is a great idea too.

You can do a few things

1. cook down and reduce to thicken

2. use a little cornstarch and water

3. add a handfull of grated parmesan cheese

4. add 1/2 block of cream cheese (will make it taste different but is actually tasty)
