Interesting question...I'd say bitter. I'd say that because something can be sweet and sour- for example "sweet and sour sauce" and bitter would be an opposite because something CAN"T be sweet and bitter at the same time...I guess???

I always thought savory was the opposite of sweet. "Umami" was recently recognized as a flavor by the japanese and could best be described as savory/savoury. Bitter would be closer to the opposite of sweet... among those you presented.

From www.dictionary.com (American Heritage Dictionary):
Savory:
2 - Piquant, pungent, or salty to the taste; not sweet.

I'd assume bitter... sour can still have sweetness to it.

Linguistically, the different of 'candy' is 'bitter'. Realistically, bodily 'salty' is the different of 'candy'. on your purposes candy is the main suitable word. Your sentence is slightly unusual nonetheless, i'm no longer completely specific what you recommend.
