Super Broccoli Salad Supreme
16 oz. Broccoli flowerets
2 tbs bacon bits
2 tbs red onion
½ cup dried cranberries (or raisins)
½ cup cashews (or peanuts)
½ cup mayonnaise
¼ cup sugar
2 tbs vinegar cider
Cut broccoli into small pieces. Put broccoli, bacon
Onion, and raisins/cashews into bowl. Toss together. Combine mayo, vinegar and sugar, blending well. Add to
Broccoli mixture and mix until well coated. Chill 2-3 hours.
Serves 8.

Have you considered a cake? Here is a good recipe that's easy to make and I guarantee, nobody will have brought one like it!
1 pkg yellow cake mix
2 -3 very ripe bananas
1 pkg glazed walnuts or pecans
3 T butter
1 cup powdered sugar
1 tsp vanilla
3 T milk
Prepare bundt cake pan and set aside. Mix cake mix according to directions and add mashed bananas. Place half of the cake mix in the pan and sprinkle 1 cup of the candied nuts on top. Top with the remaining batter and sprinkle all but 1/2 cup of the nuts on top. Bake until golden brown and top springs back.
For glaze, mix softened butter with powdered sugar and milk, add vanilla. If mixture is too thick, then thin out by adding more milk 1 tsp at a time until mixture will coat the back of a spoon but is too thin to frost with a knife.
Remove cooled cake from pan and pour glaze over the top evenly. It will drip down the sides. Top with remaining nut pieces. Yummy!

8 ounces Cream Cheese
14 ounces Artichoke Hearts, drained, coarsely chopped
1/2 cup Spinach frozen chopped, or steamed
1/4 cup Mayonnaise (do not use Miracle Whip)
1/4 cup Parmesan Cheese
1/4 cup Romano or Parmesan Cheese
1 clove garlic, finely minced
1/2 teaspoon Basil, dried
OR
1 tablespoon Basil Fresh
1/4 cup Mozzarella Cheese grated
1/4 teaspoon Garlic Salt
Salt and Pepper to taste
Directions:
Allow cream cheese to come to room temperature. Cream together mayonnaise, Parmesan, Romano cheese, garlic, basil, and garlic salt. Mix well. Add the artichoke hearts and spinach (careful to drain this well), and mix until blended. Store in a container until you are ready to use. Spray pie pan with Pam, pour in dip, and top with cheese. Bake at 350 degrees for 25 minutes or until the top is browned. Serve with toasted bread.

Deviled eggs, easy and everyone always devours them!
If you're taking a hot dish, I like to do pulled pork. I just put a pork roast in my crockpot, season with some brown sugar, when it's about done I add some coke to it, let it cook about an hour longer and then shred it adding BBQ sauce and serve that with buns.
If you need a dessert, do Scotcharoos....these are always very popular!
In a heavy sauce pan, bring the following to a boil:
1 cup of sugar
1 cup of light corn syrup (Karo)
1 1/2 cups of peanut butter
Add to that 6 cups of rice krispies, mix well and put that into a non-stick 9x13 pan, flatten out the top and let it cool
When cool, melt the following:
1/2 bag of semisweet chocolate chips
1/2 bag of butterscotch chips
frost the rice krispies in the pan with this, let harden (sometime I put in fridge for just a bit). I cut mine with a pizza cutter. They are delicious and addictive!!

Shepherd's Pie - it is a complete meal (meat, veggies & mashed potatoes on top) & it is something unusual but made with familiar ingredients.
Shepherd's Pie
1 small onion
1 1/2 pounds ground beef
2 (8-ounce) cans tomato sauce
1 1/2 cups mixed vegetables or niblet corn, prepared
Salt and freshly ground black pepper
8 to 10 medium red new potatoes
1 1/2 cups milk
12 tablespoons butter
1/2 cup sour cream
2 cups instant biscuit mix
Beef Layer: Saute onions in 2 tablespoons butter. Add ground beef. After beef is browned, add tomato sauce; Mix in vegetables. Add salt and pepper, to taste.
Potato Layer: Peel and slice potatoes 1/4-inch thick. Cook in boiling water for approximately 15 minutes or until fork-tender. Whip potatoes with electric mixer; mix until moderately smooth. Don't over beat them; a few lumps are nice. Add 1/2 cup heated milk, 1/2 cup butter, and sour cream. Salt and pepper, to taste. Whip until mixed. Adjust thickness by adding more milk, if desired.
Biscuit Layer: Combine biscuit mix and 1 cup milk. The mix should be thinner than normal biscuit mix but not runny.
Preheat oven to 350 degrees F.
Spray a 9 by 9 by 2-inch pan, or any similar casserole dish. Layer half way up with the mashed potatoes. Next, spread a layer of mixed vegetables or niblet corn on top of potatoes. Then add a layer of the meat. Pour biscuit mix over meat. Melt 4 tablespoons of butter and drizzle over top. Bake for approximately 35 to 45 minutes until top is golden brown.

My other suggestion would be to make a huge taco salad. Layer taco meat, beans, lettuce, onions, tomatoes, olives, tortilla chips and salsa. You can have Ranch dressing or extra salsa on the side.

i make a killer spinach dip.take a package of frozen chopped spinach thaw and press all water you can out add 1 pkg of either knorr brand or mrs grass veg soup mix[ not canned soup but dry]i can of water chestnuts i use the sliced chop up real fine.add1cup ea[8 oz] mayonaisse,sour cream mix all together.get 1 hawaiian sweet bread. cut the top off put dip inside bread use remaining bread to put on side in litle pieces.i gurantee people will love it i take this to all potlucks at work and it is always requested!!yummy.

This is a really good recipe even though it doesn't sound like it. Mix 2 lbs of store bought frozen meatballs with a jar of grape jelly and a jar if Chili Sauce (kinda like catsup). Heat and serve. Really simple and it will keep guests guessing what the ingriedent are.
I agree that deviled eggs are good to take as well. I like this recipe

Pot luck is hard, I would suggest a swedish meatball, or a sweet and sour meatball, they are both good to eat by themselves and are both fairly easy to make.
