Large is the typical size, though many recipes won't be affected if you use a different size. Usually they will say if you have to use large only. You can notice at the store that large eggs cost more than XL a lot of times. This is because large eggs are the standard size.

Recipes are set for the use of large eggs. Generally speaking, if your using anything smaller, you simply add an extra egg. I have made recipes without adding the extra egg when it was smaller and the outcome was fine. So I don't think it's an exact science. Best wishes to you!

Most recipes mean an average large egg. If the egg is too small, you won't get the desired results, be it leavening, "glue" to hold things together, etc. In baking, eggs are usually a leavening agent. In recipes that call for a breading, the egg is to get the breading to stick to the food. In recipes like meatloaf, etc., the egg holds other ingredients together.

Most recipes don't differentiate between the size of the eggs. I usually purchase large to extra large eggs and my recipes turn out just fine. Stay away from Ostrich eggs, though, they're huge!!! :)

Generally they mean medium. But there is so little difference between medium and large eggs that for most recipes it won't even matter. Use what you have on-hand.

most recipes assume you will be using large eggs- if you have small eggs, add and extra one- if using medium, it should be ok with the number called for.
