Red Beans & Sausage
2 Cans Chicken Broth (can use water)
Package Dry Red Beans
1-2 Smoked Sausage cut into bite-size pieces
Cajun Seasoning or other seasonings (to taste)
White or Brown Rice cooked according to package directions
Bring Chicken Broth and enough water to equal 5-7 quarts to a boil in large pot. Add beans, reduce heat to low and let simmer for 45 minutes.
Add cut up sausage and seasonings to taste (you can pan fry the sausage before adding it to the beans). Simmer for 2 hours or longer.
Serve with rice if desired.

Red Beans and Rice with Ham Hocks and Kielbasa Sausage
Ingredients:
1 pound red kidney beans
water
6 ham hocks
14 cups water, divided
2 1/2 cups celery, fine chop
2 cups onion, fine chop
2 cups green bell pepper, fine chop
5 bay leaves
2 teaspoons white pepper
2 teaspoons dried thyme
1 1/2 teaspoons garlic powder
1 1/2 teaspoons dried oregano
1 teaspoon cayenne pepper
1/2 teaspoon black pepper
1 tablespoon Tabasco sauce
1 pound kielbasa, cut diagonally into 1 inch pieces
4 1/2 cup hot cooked rice
Preparation:
Cover the beans with water 2 inches above the beans. Let stand overnight. Drain before using. Or cover with water, bring to a boil, remove from heat and let stand covered for 1 hour.
Place the ham hocks, 10 cups of water, the celery, onions, bell pepper, bay leaves and seasonings in a 5 1/2 quart saucepan. Cover and bring to a boil over high heat.
Reduce the heat and simmer until meat is tender, about 1 hour. Remove the ham hocks and set aside.
Add drained beans and 4 cups of water to the pan. Bring to a boil, reduce the heat and simmer 1 hour, stirring often. Stir in kielbasa and simmer until the beans start to break up, approximately 30 to 45 minutes.
Scrape the bottom of the pan often to ensure that the beans are not sticking.
Remove the meat from the ham hocks and add to the beans and sausage. Stir and cook 10 minutes more or until ham is heated through.

This is yummy!!! Basically you take one can of red beans, one can of tomato sauce, a little all purpose seasoning (I used adobo), cube up some kielbasa, ham or chorizo whatever you can find, & 2 tbsps sofrito (its a spanish seasoning you can find it in the frozen food isle for less than $2 if you don't want to bother just throw in 1/4 of a small onion, 2 crushed cloves of garlic & a 1/4 green or red pepper if you can) mix them all in & heat! If its too thick add a little water at a time. As soon as its all hot you have the perfect bean stew. Eat it with rice or potatos! its delicious!!!

Red Kidney Bean Salad:
20 min 20 min prep
4 servings
3 (16 ounce) cans red kidney beans, drained & rinsed
1 cup chopped onions
1 cup chopped celery
1 cup mayonnaise
1/4 cup oil
1 tablespoon regina red wine vinegar
1/4 cup sweet pickle relish, drained
1 pinch sugar
salt & pepper
1. Mix mayonnaise, oil vinegar, sugar, salt and pepper.
2. Add onions and stir well.
3. Then add the celery, beans and relish.
4. Chill overnight.

Bean Lasagna
Makes: 5 Servings
Ingredients:
4 Cans Diced Tomatoes
1 12 Oz Bottle Taco Sauce
2 Cups Corn
15 Lasagna Noodles
1/2 Cup Black Olives
1 1/2 Cups Cottage Cheese
2 Cans Refried Beans
Directions:
1. Add 5 oz taco sauce to the bottom of a lasagna pan. Spread around
the bottom.
2. Cover sauce with a layer of noodles.
3. Add beans, cheese, corn, diced tomatoes, the remaining noodles,
and the remaining sauce in any order you wish, but save enough beans
for a final layer.
4. Place a layer of noodles over the alternating layers.
5. Finish with a layer of beans and taco sauce.
6. Cover with tin foil and bake at 375 degrees until
lasagna noodles are cooked.

Red kidney bean burgers
INGREDIENTS
1 tablespoon olive oil
1 medium brown onion, finely chopped
1 small red capsicum, finely chopped
2 cloves garlic, crushed
2 x 300g cans red kidney beans, drained and rinsed
1 cup stale wholemeal breadcrumbs
½ cup tomato paste
1 teaspoon dried rosemary
Salt and pepper, to taste
Extra 1 tablespoon olive oil
Hamburger buns, lettuce leaves, sliced tomato, sliced red onion and potato fries, to serve
METHOD
1. Heat oil in a large pan. Add onion, capsicum and garlic; cook, stirring, until onion has softened.
2. Blend or process beans until finely chopped. Transfer to a large bowl. Add onion mixture, breadcrumbs, tomato paste and rosemary; mix well. Season with salt and pepper.
3. Roll 1/3 cup of bean mixture into a ball; place onto a greased oven tray. Flatten ball to make a 1cm-thick patty. Repeat with remaining bean mixture. Brush patties with extra olive oil.
4. Cook in a hot oven, 200C, for about 20 minutes, or until patties have browned.
5. Sandwich patties between split, toasted hamburger buns with lettuce, tomato and onion. Serve with potato fries.
