This is the 'original' Coney Island chili sauce. It makes a LOT, but it freezes quite well.
5 lb beef heart grated twice, very lean ground beef (like from round), or finely ground venison
2 tbsp garlic powder
2 tsp cumin seed
2 tsp paprika
5 tsp chili powder
salt-pepper to taste
enough water to cover
Brown beef or venison in a large pan or dutch oven. Make sure it is well broken up.
Pour enough water in to cover completely.
Add all other ingredients and simmer 2-3 hours.

HOT DOG CHILI SAUCE
2 lbs ground beef
1 large onion, chopped
4 cloves garlic, peeled and minced
1/2 cup ketchup
1/4 cup barbecue sauce
1 tablespoon hot sauce
2 tablespoons yellow mustard
Saute beef with onion. When beef begins to brown, add garlic. Turn heat to high and cook one more minute.
Stir in remaining ingredients and reduce heat to low. Simmer 10 minutes and remove from heat.
Line hot dog buns with a steamed or grilled hot dog and top with Chili Sauce mixture, then sprinkle with chopped onions and shredded Monterey Jack or Colby cheese.

A Super-easy one:
Ingredients:
1 lb. ground beef
1 small yellow onion, peeled and chopped
1 packet of McCormick brand chili mix (powder)
1 can Rotel tomatoes
water (1/2 cup to 1 cup depending on how thick you want your sauce!)
Directions: Brown ground beef and onions. Stir in chili powder mix, water and can of Rotel tomatoes. Bring to a boil, then simmer for about 20 minutes.

Chicago Style " Hot Dog and Fries
8 beef hot dogs, Vienna
2 lbs idaho potatoes, unpeeled and straight cut (3 inches long by 1/2-inch thickwashed and towel dried)
8 hotdog buns
1 cup onions, chopped
1 cup fresh tomatoes, seeded and cut into wedges
1 cup yellow mustard
1 cup sweet pickle relish
8 pickle spears, kosher-style
hot pepper, to taste (Sport peppers)
celery salt, to taste
Preheat the fryer.
Fill a stock pot 3/4 of the way full with water and bring to a boil. Add the hot dogs, reduce the heat to a simmer and cover. Cook until the hot dogs are plump, about 6 to 8 minutes.
Fry the potatoes until golden brown, about 4 to 6 minutes, stirring occasionally for even browning. Remove and drain on paper towels. Season with salt and pepper. Place the hot dogs in the buns. Start topping the hot dogs with 2 tablespoons of each: onions, tomatoes, mustard and relish. Top with sport peppers to taste and sprinkle a little celery salt on top.
Place each hot dog in the center of a piece of deli wrap. Place the fries next to the hot dog. Wrap the dog and the fries up tightly and serve.
or
Hot Dog Sauce
2 lbs ground beef
1 tablespoon paprika
2 teaspoons ground cumin
2 tablespoons chili powder (I prefer Mexene)
1 teaspoon salt
1 dash cayenne pepper
1 tablespoon black pepper
water
2 cloves garlic, finely chopped
Add enough water to cover ground beef.
Heat until it begins to boil, mash it with a potato masher until fine.
Add rest of ingredients.
Simmer 1/2 hour to 45 minutes.

NYC Hot Dog Onion Sauce
1/2 cup water
1 medium onion, chopped
1/3 cup ketchup
4 tablespoons cider vinegar
1 teaspoon coleman dry mustard
1 teaspoon paprika
fresh ground pepper
In saucepan combine all ingredients.
Bring to boil.
reduce heat; simmer 5 to 10 minutes, until desired consistency.
or
New York Hot Dog Cart Onion Sauce
2 medium onions, sliced very thinly
1 cup water
1/4 cup ketchup
1/8 teaspoon salt
1/8 teaspoon cinnamon
2 teaspoons vegetable oil
In a small sauce pan place vegetable oil, and onions, Medium heat, don't burn it.
Saute until it is soft.
Quickly add Ketchup, water, stir.
Now I had to mention a measurement in order for this recipe to go through, the truth is use a pinch of Cinnamon and a pinch of salt, Stir for at least 20 minutes or until the water is reduced about 1/2. This is the true recipe for Onion Sauce for New York Hot dogs. When I use the sauerkraut I boil it with added water to make it softer.
