I like cooking steak on the grill, but as often as i check it for the right amoun of cooking, I get a lot of ripped open steak and its not really good for presenting.

Restaurants use the hand guide. Touch your thumb to your first finger closest to it. Touch your palm with your other hand. This is how tender a rare steak should be. Touch your thumb to your second finger and this is medium rare.. third finger is medium, and pinky finger is well done.. try it, it works.

Using your left hand, get your thumb to touch your centre finger. Based on the firmness of your flesh at the base of your thumb while doing the motion above, you can gage the steak based on the same firmness for a medium rare steak. Thumb and fore finger would be for rare steak; thumb and pinkie would be for well done steak.

use a meat thermometer

Steak - Medium Rare
Internal Temperature 130 to 135 degrees F. (55 to 57 degrees C.)
