Serves 6 to 8
2 lbs lean ground beef 1 kg
2 large cloves garlic, minced 2
2 stalks celery, finely chopped 2
2 large onions, finely chopped 2
2 tbsp chili powder 25 mL
1/2 tsp dried oregano 2 mL
1/4 tsp cayenne pepper 1 mL
1 can (28 oz/796mL) tomatoes, diced, with juice 1
1 can (19 oz, (540 mL)) red kidney beans, drained and rinsed or 2 cups (500 mL) soaked, cooked and drained beans
2 tbsp cocoa powder 25 mL
1 tsp brown sugar 15 mL
3 or 4 whole cloves 3 or 4
1 tsp white vinegar 5 mL
1/2 tsp black pepper 2 mL
1 medium green pepper, finely chopped 1
Salt and black pepper to taste
1. In a large nonstick skillet over medium heat, combine ground beef, garlic, celery and onions. Cook until vegetables are tender and meat is no longer pink. Add chili powder, oregano and cayenne; cook 1 minute longer. With a slotted spoon, transfer mixture to a slow cooker.
2. Add tomatoes (with juice), kidney beans, cocoa, sugar, cloves, vinegar and pepper; stir to combine. Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours, until hot and bubbling. Add green pepper and stir to combine. Cover and cook 20 to 25 minutes longer. Season to taste with salt and pepper.
Tip: For those who like their chili a little spicier, add more cayenne pepper.
Night Before
This chili can be assembled 12 hours in advance of cooking (but without adding the green pepper). Follow preparation directions and refrigerate overnight in slow cooker stoneware. The next day, place stoneware in slow cooker and continue cooking as directed.

This is not a recipe, it's just something I threw together one weekend for a picnic at the lake.
Everyone's taste is different, so you add as much or as little as you like.
Saute chopped onion, garlic, & green pepper in a little EVOO(extra virgin olive oil) until slightly soft. Add ground beef and brown.
Season with what you like, salt, pepper, chili powder, season salt, Mrs. Dash, Mc. Cormick seasonings, just whatever you have on hand.
Add a small, or large, or a couple cans of crushed tomatoes, tomato sauce, canned kidney beans, canned pinto beans.
Adjust ingredients to the servings you need and what you like best. If you like more pintos, add an extra can.
Add a couple of cans of your fave brand of canned chili.
If it's too thick add some beef stock or broth(quick, easy, good flavor).
Everythings already cooked, so you should only need to simmer for 20 mins. or so. Or it can simmer a couple of hours if you want to make it ahead of time. Just add a little more stock if it gets too thick.
My family loved it and have been begging for more, I just keep forgetting to make it.
It made excellent Frito pies.

I have a good one. Fry in oil 3 peppers sliced thinly and 2 onions and 2 garlic cloves till golden (high heat first then low heat for about 10 min). Add a tablespoon of sugar, salt, pepper, and chili spices. Add 1lbs of mince beef. Cook it through. Add a can of diced tomatoes and a can of red kidney beans (be careful, use the juice in the can wisely, if your chili is thick add a lot of the cooking juice, if it is runny drain the beans). Cook over low heat for 20min. Taste and adjust spices if needed. Serve with rice and fresh coriander. To make it hot and spicy add hot chilies with peppers or tabasco sauce whilst eating. Bon appetit

This is the easiest chili recipe on the planet, and it tastes amazing! I recommend the Frito scoops to eat it with. And I like to throw some cheese on top and a glob of sour cream YUM!! It takes 2lbs. ground beef browned. You don't have to drain it. Then add Chili Powder to the beef to taste. Add a big can of Light Red Kidney Beans. I believe it's about 32 oz can or something like that. Or two 16oz cans. Smash the beans with a potato masher if you like. Add a family size can of Tomato Soup and a 16 oz can of Tomato Sauce. Heat up and enjoy. You don't have to let this one stew. It is ready to eat as soon as it's hot!! ENJOY!

1 (15 ounce) can tomatoes
1 teaspoon cumin
1 teaspoon paprika
2 teaspoons chili powder
1 teaspoon oregano
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Worcestershire sauce
1 can chili beans
1. Saute meat, onions and garlic until done.
2. Add remaining ingredients and simmer for 2 hours.
