Does the starch in potatoe have yeast in it?

In the potato itself, No...

however, yeast cells are always floating around the air... that's the theory on how sourdough cultures are started by using the naturally occurring yeast in a locale.

No it does not so if your yeast intolerent ....go have a baked potatoe ...it's safe honest!!!

no but potatoes can be used to make some mighty fine bread
