You're lactose intolerant?
Most pumpkin pie recipes call for evaporated milk or heavy whipping cream (in the filling) and use butter (in the crust).
A vegan pumpkin pie (no dairy, uses soy or tofu instead) will probably not have the same effect on you.

Pumpkin has a lot of fibre.
Gases are produced as a by-product when certain food materials are digested by naturally occurring bacteria in the large intestine, or colon. These bacteria are responsible for digesting materials like complex carbohydrates (sugar, starches, and fibber found in many foods) and cellulose, which are not normally digested in the upper gastrointestinal tract.

I ate pumpkin pie today and its given me super flatulence. Of course, eating the entire pie might have something to do with it.
