Sea Foam Candy
Ingredients
1 1/2 cups light brown sugar
1 1/2 cups white sugar
1 cup cold water
1/2 cup chopped nuts
1 tablespoon vinegar
2 egg whites
1/4 teaspoon salt
1 teaspoon vanilla
Method
Boil sugar, water and vinegar to soft ball stage.
Remove from fire.
Beat egg whites and salt until stiff.
When syrup has stopped bubbling, pour gradually into egg
whites and beat well.
When it begins to stiffen, add vanilla and nuts.
Drop by teaspoonful on wax paper.
Yield: 2 dozen.
Old-Fashioned Sea Foam Candy

This old-fashioned candy recipe is light and
airy, which is the reason it is called 'sea foam'.
Servings: 16
Ingredients:
1 pound white sugar
1/2 pint water
4 tablespoons distilled white vinegar
3 tablespoons light corn syrup
1/2 teaspoon baking soda
12 ounces semi-sweet chocolate chips
2 tablespoons shortening
1 (1 ounce) square unsweetened chocolate
Directions:
1. Butter or oil an 8 inch square baking pan; set
aside.
2. Put sugar, vinegar, syrup, and water in a
heavy 4 quart saucepan (cast iron if you have it).
Gently heat the mixture, stirring with a wooden
spoon, until sugar has dissolved and syrup has
melted. Bring to a boil, cover and boil for 3 minutes,
then remove lid and boil until temperature
reaches 285 degrees F (140 degrees C) on a candy
thermometer. Remove from heat and stir in the baking
soda, mixing well to allow bubbles to subside a
little.
3. Pour hot mixture into prepared pan and leave
until just beginning to set. Mark into squares
with a lightly oiled knife. Leave to set
completely. Cut or break into pieces.
4. Combine chocolate chips, shortening, and
baking chocolate in a 2-quart glass bowl. Microwave
on High for 2 minutes to melt. Stir with a wooden
spoon. Dip candy pieces into chocolate, covering
completely. Let cool on waxed paper.
5. Wrap individually in waxed paper, twisting the
ends together, and store in an airtight
container.

2. Beat egg whites until stiff. Pour hot syrup in thin stream over egg whites, beating constantly with electric mixer on high speed. Add vanilla and pecan flavoring.
3. Continue beating until soft peaks form and candy starts to lose its gloss. Stir in pecans and drop by spoonfuls onto waxed paper. When candy has set, store in airtight

Is this it??this is white and crumbly, sugary when done..vanilla flavor with fine chopped nuts...very good..this is very similar to princess' recipe above except for the brown sugar and butter pecan flavoring in hers...I think the difference between sea foam and divinity is the vinegar...
Divinity Candy
Place in saucepan over low heat:
2 cups sugar
½ cup light corn syrup
½ cup water
Stir until sugar is dissolved; then cook without stirring to 252 degrees (a little dropped into ice water forms a hard ball). Remove from heat and pour, beating constantly, in a fine stream into:
2 egg whites, stiffly beaten
Continue beating until mixture holds its shape and loses its gloss. Add:
1 tsp. vanilla
½ cup finely chopped nuts
Drop quickly from tip of spoon onto pieces of waxed paper in individual peaks…or spread into greased shallow pan and cut into 1” squares when firm. Makes about 1 ¼ lb.
STRAWBERRY DIVINITY
3 c. sugar
3/4 c. light corn syrup
3/4 c. water
2 egg whites, stiffly beaten
1 (3 oz.) pkg. strawberry jello
1 c. chopped nuts (optional)
1/2 c. flaked coconut (optional)
Combine sugar, syrup and water. Bring to a boil, stirring constantly. Then cook without stirring to 260 degrees on candy thermometer. Combine beaten egg whites and jello. Beat until mixture forms peaks. Pour hot syrup in a thin stream into egg whites, beating constantly. Beat until candy loses its gloss and holds its shape. Fold in nuts and coconut. Drop by spoonful onto wax paper.

these didn't all appear to be the same, hope this helps.
my mom used to make fudge using sugar/cocoa-took me forever to find the recipe not using corn syrup.
